I'm chilling my 2nd batch of butter crackers. I baked a sheet of graham crackers. Very tasty, I tried using the pasta maker with the graham crackers. Ite dough was too soft. I should have had more flour into the mixture. The rest of the dough is chilling. I will shortly try the cheese crackers on the pasta machine 😋 😊 So far, the flavor on each cracker is wonderful. I am so happy you are enjoying the flavors! With the pasta maker and the cheese crackers, you have to put it through a few times, it will crumble apart the first several passes, but then it all comes together nicely! So yummy! The graham crackers, I actually prefer hand rolled as far as texture goes, because to roll it through the pasta maker it took adding too much flour, and they became more thin & crisp. Still wonderfully delicious, but I like those thicker puffier graham crackers. We didn't need to add any flour to the cheese dough to go through the pasta maker. Happy Baking!

QUESTION: I have the nutrimill artiste mixer. I have the cookie paddles but mine look nothing like yours, and yours takes one and mine takes two. Would I still use the cookie paddles or change to the whip or whisk attachmets. The only other wttachment I have is the d ough hook. Going to try in morning with my granddaughter. Oh my Challah bread.... was a flop😢

I have spelt but not soft white. I have enikron, kamut and hard white. Which one would you recommend to replace the soft white? How would you recommend to store the crakers for long storage?
You can use spelt in place, einkorn and Kamut would probably work as well. Just watch the moisture level, you may need a tad more liquid in each recipe. It varies with the different grains. I put them in a sealed container for 2-3 days. For longer storage, you can freeze them. But they don't have preservatives, so they won't last as long at room temperature as the store bought kind. I just used my Ankarsrum and stainless bowl with just the scraper on cheese crackers to mix the flour and butter and cheese worked like a charm, and then put on the roller when adding the water❤️❤️❤️❤️

Hi! Welcome! You can use a hard variety, but it will make for a bit harder result. If you have soft white or soft red that would work great too!

Can the wire whisks be used for the cheese crackers with Bosch or does it HAVE to be the cookie paddle?
I normally use the cookie paddles, but I would think the whisks may work. It might help break the cheese into smaller pieces.
