While mozzarella is probably the best-known buffalo cheese, buffalo milk can be used to make all types of cheese, even blue vein and brie. Quattro Portoni is a family-run farmhouse cheesery in Lombardy, Italy specialising in buffalo milk cheese. Over the years, they have adapted traditional cheese recipes from the region (including Taleggio and Gorgonzola), to be made with 100% buffalo milk sourced from their own herd. Co-owner and head cheese-maker Bruno Gritti, and his daughter Michela show us around the farm and talk about some of their trademark cheeses.
My father is retiring this Summer and I'm adding this to my list of places to go. Cheese, wine, Italian food!
I watched this on Friday night, and was somewhat melancholy at the thought that I might never get to try any of these cheeses. Then, earlier this evening, I left the cozy confines of Brooklyn, New York, to meet some friends in the uncharted wilderness of Jersey City, New Jersey. Machete in hand, they led me though the jungle and tundra to a delightful turophilic oasis known as 3rd & Vine. Lo and behold, they were serving Quadrello!
Was it good?
It was, but I prefer your standard issue cow's milk Taleggio.

I'm thinking you might think of doing a segment on how to purchase some of these cheeses. For those of us out here in the middle of Oklahoma (for example) the idea of obtaining some of these cheeses is almost out of the question.
+Richard Swinney ... .. Those that here in Italy produces high quality cheeses like these, they have a small/medium production, are artisans. Many of them do not sell to big supermarkets, but they work with restaurants, however, are increasing those that have websites and send by air ... I can not tell you the shipping costs. Ciao!

hope these buffalo are not kept confined to these metal stalls for long...and allowed to roam around free for a few hours at least. there is one who seems to love the camera...when the woman in the printed t-shirt is talking, so sweet they are.
Reincarnation It is cages under a roof for feeding... European and italian laws strictly forbidden cattle being kept in closed cages for long time, except being kept in stables during snow winters.

JarJarBinks no dear, they are not Murrah. Murrahs have tight ring shaped horns with fewer body hair. They are fantastic milkers. International buffalo summit was held this month in India. There was a delegation from United States.

In the case of a consortium for the protection of the product, the name, and the territory, the producer is required to follow a specific disciplinary (DOCG, PDO, etc.), made up of rules on cleaning, pastures, milk treatment, maturation some cheese, etc. Failure to observe may lead to the revocation or non-renewal of the trademark for protection of its products.

@@opokrisna9442 they are mediterraneo, they were brought to Europe by crusaders returning from middle East. Swamp buffaloes and riverine buffaloes cannot breed true. Swamp buffaloes have 58 pairs of chromosomes and riverine buffaloes have 60 pairs of chromosomes.

Did you find out what happens to the baby buffalo birthed to begin lactation? It always concerns me.
+FiveAndAHalfCow The calf is likely put in with the milkers if it's a female, or sold, or used for breeding (to begin lactation) if it's a male.
The male calves all get killed in a horrific and brutal manner as they are considered worthless. The females have no pond to wallow or swim. It is a very cruel business and I stopped buying from Italy. I drink soy milk and eat tofu.

That's isn't necessarily a good thing, in Italy the industryput a lot of attention on cheese quality, if you make a lot of average cheese you wouldn't sell much.
