Not gonna lie, this looks like a fun as fuck way to cook food. Not just coffee but in general. Easy clean when you're done and you can always get more sand extremely easy if it gets dirty overtime.

Wouldn't adding the milk in the pot like that destroy it from the temp and make it taste bad? I've always seen just the coffee and sugar do the foaming and that's all, add the milk after maybe if you want it

I think this is their traditional way to serve milk coffee and they are used to it. This style of serving coffee break all the rule of italian style coffee.
Its s less aggressive heat and can be easily controlled temperature wise hence why he kept moving whereas straight flame would have a tendency to burn the coffee and milk
