Homemade almond butter in your Vitamix | The Hangry Woman

  • Welcome to my diabetes cooking channel! I love making almond butter in my Vitamix for a few reasons.
    1) I know what's actually in my almond butter.
    2) I can make my almond butter at one with no oil.
    3) I can make batches that I actually can finish.
    In this video I'm showing you how to realistically make almond butter in a Vitamix A3500 Ascent Series Blender. This requires no oil and no roasting (just make sure you use the proper setting).
    This takes roughly 10 minutes of your time, but the results are worth it.
    I found that the key to good almond butter is to blend it for as long as it takes. The longer you blend, the more the natural oils release to make your almond butter pretty creamy.

      I'm always surprised at how much better it tastes than store bought, and how it doesn't need any extra oils or fats to make it perfect!

    If you roast your almonds first, they can mix in just a minute or two perfectly. If you blend them too long without oil, the heat takes the nutrients out. However, if you want to blend almonds without roasting first, add some healthy oil. It shouldn’t take longer than a minute or two. 😘

      Totally! That’s how I do it now. I originally used and old recipe recommended by Vitamix for this, which was raw almonds alone and it needs either roasting, or oil (as I learned)!

    I've had my VItamix for several years now and never had a problem. I roasted the almonds, completely let them cool for a couple of hours. The best way to get the almond butter going is to use the "PULSE" function first before "burning up the motor" . Using the "pulse" setting will chop the nuts up first then you can switch to the blend function. I just use a soft spatula to push the nuts into the blade. Comes out perfect every time.

    Thank you for the video. It was very informative. You have a great style. So relaxing to watch your tutorial, and your kitchen is lovely as well. ☺️ There’s one thing I would do first though before starting on the final smoothie. I would scrape down the sides of that container with a bigger spatula to get as much of that left over butter into the final “cleanup smoothie.” Personally, I’d want to get as much product used up, especially since almonds aren’t the cheapest of nuts, plus the elbow grease you put into making it too. Phew!

    Thanks for showing the error code! I’ve had the same experiences with mine several times. My first time making almond butter turned out poorly. Hopefully mine will turn out as well as yours did the next time!

    Would soaking the almonds overnight or for a few hours? Glad you showed us how it might not work. The Vitamix should be able to do this

    Loved your video and the extra smoothie at the end!! I wanted to say that the reason you may have had issues blending is because you skipped the roasting step. To my understanding, if you roast the almonds for about 10 min in the oven, they will release natural oils which is why many people forgo the use of extra oil when blending roasted almonds. If you skip the roasting step, just add 3-4 tablespoons of oil in and it should work quicker. 😊

I'm hoping to get a vitamix in the future, but don't currently own one and would like to know what method is easiest for whenever I do end up trying it out myself :)

    The music is louder than the dialogue by a large amount so that I turned the volume up and down. Showing exactly how you scraped it down while blending helped me get an estimate of how it would be when I try with boiled nuts.

    I make peanut butter all the time. My old Vitamix worked better than the newer one. That said, I had one over heating problem and it never happened in the old one. Roasting the nuts or buying roasted nuts makes a BIG difference. Yes the blender gets hot but it is not the same as dry roasting. It’s kind of like grinding coffee beans in the regular container. It releases the oils and not in a good way. Might be the reason your machine over heated. Not judging just trying to help

      This is totally helpful! I tried it out the way one of the vitamix recipe books suggested; but the nuts definitely need to be roasted first. It does work so much better!

    It's not 'shorting out', it's just over heating - the blender is disabling itself temporarily to prevent it from getting damaged. When that happens just wait for a while till it cools down and then try again later.

      I made it from a vitamix recipe, so I’m very surprised the blender couldn’t handle it.

    how much almond butter did you get from 4C of almonds? that jar looked small.

      Around 2 cups from 4 cups of whole almonds.

    The vitamix heats them but it doesn't actually roast them. I roast them and let them cool enough but still warm and then put them in the Vitamix. What ever works! :)

    you need to ramp it up to 10 to avoid it overheating

      I have an old vitamix and never have this problem if I roast them first and add coconut or avocado oil.

    the vitamix A3500 is overated, the older one is much better and even the Ninja Ultima can make almond butter in 6 minutes or so... for half the price
