The texture of your cheesecake looks otherworldly fluffy and creamy and I can’t wait to try this no-Bain Marie, lower temperature oven recipe! One quick question, though: We don’t really have sour cream (or crème fraiche) here where I live. Any recommendations on how to substitute it or how to make my own?

Shereen, how did you get that perfect creamy texture? I just followed all the steps, everything was room temperature and no matter how long I whisked I still have lumps in my batter! It's super frustrating haha. Cheesecake is in the oven, so we'll see, I'm just afraid the lumps won't dissolve while baking and I'll be left with a lumpy cheesecake.

So you don't have to use the water bath with this technique. I've always been told to do that around the cake to prevent cracks. I will try your method.
Hello, my cheesecake is cooling at room temperature as I type. Well, this is by far the less cracked cheesecake I have ever baked, but I had some problems: 1. After 1h 45m baking at 107°C (225°F), my cheesecake was still very jiggly. The edges were not firm, and since I was afraid to undercook it, I added the time and in total, I baked it for 2h 15m. I feel the need to mention that I have industrial oven, which means it has digital temperature control and it reads the actual temperature. And also the oven doesn't have racks, only one rack and it can fit 2 40x60cm baking pans. The color of the cheesecake after I took it out is completely yellow, not browning at all. The edges are soft but set, and the center is quite jiggly. I'm afraid it will be too soft to serve later, what do you think? 2. It still cracked around the sides. Even tjoughthey are minor cracks, not that deep, the cracks appeared when it was still baking. After I left the oven door slightly open, and left it for 15m (sorry I misheard you, it's supposedly 50m right? 😂), I took it out and place it on my dining table. After a while, the cracks appeared again nearing the center of the cheesecake. Sooo it's not completely crackless. I really don't want to try bain marie bcs of the hassle, so I'm wondering if I can increase to temperature to 110°C (230°F) and bake it for 1h45m, or should I just bake it at the initial temperature but longer? And also, if I want to bake this in 6 inch springform pan, how long should I bake it? Anyway, very straightforward video, me likey 👍
