    Great video for those new to canning and us old folks, too. And, yes, I have some canned tomatoes that have been on my shelf quite a while. Probably as old as yours. Those tomatoes are rationed!! Only used, 2 qts at a time, to make a special pot of soup a family Christmas gathering. I'll be sad when I open the last jar. Not many left. Our local Walmart has the medium Mrs Wages in packets and in tubs. After watching your video I'll put a few on my stock-up list. Then, I'll be watching tomato sale prices (fresh or canned). Like you I can and dehydrate year round.
    FWIW... Tomato skins. For most canning projects I don't remove the skins from tomatoes anymore. I core, quarter and then drop into a blender. Then pulse. It cuts the skin into tiny pieces that tend to disappear into whatever the end result is to be.
    When, blanching or freezing and peeling, the skins can be dehydrated and turned into tomato powder. Add that to recipes that contain tomatoes. Dehydrating is an alternative to freezing or canning excess tomatoes. If ground for use, the powder can become tomato paste or sauce depending on how much water is used to rehydrate.

      I have been trying to figure out canning my own tomato paste. I did not even think out the skin
      Sorry: think about skins to dehy and then to powder and then to paste. Great info. Thank You

      You can dehydrate tomato slices and cherry tomato halves, too for "sun dried tomatoes" and to convert into powder as well. Saving the skins to dehydrate, when canning tomatoes is a way to use what often goes into the compost pile.

    I love the idea of freezing the tomatoes and then canning them when you have time. Also, loved the fact that you went and got some of your already canned tomatoes. That's the awesome thing about canning and having your own pantry.

    I love this salsa! I made 36 pints this year! My hubby goes through salsa like it’s candy! This year I plan to can up diced tomatoes! Thank you for sharing!❤️❤️

    I made salsa this year with poblanos I grew myself. Turned out to be a little too spicy for my daughter in law, so I recooked a couple pints adding some previously canned tomatoes to dilute the heat. Worked perfectly and she enjoyed the salsa too! (I can water bath 4 pints in my stock pot with a bottom rack) Good video, thanks. Canuary, yay!

    I love good home made salsa. I cook/can just for myself so I've been making mine in 1/2 pint jars, otherwise things go bad before I can use it all. Great video!

    When I was first learning to can, I was not taught that there was a distinction between putting the jars into the waterbath canner and starting the timer as opposed to letting the water come to a boil before starting the timer. Of course, I have learned since that time. Thanks for making that clear in your video for the many first time canners!

    If it wasn't for the need of shelf stable salsa, I wouldn't have ever started canning 48yrs ago. I love mine sweet & sassy!!

    I used this Mrs Wages this past year. I also used the pasta sauce, dill pickles and sweet pickles all of which were fantastic. I think I want to try the hotter version this coming year. Love it, thank you!

    I’ve never used the packets of seasoning additives but I do look at them each time I’m in a canning section. So far I’ve not seen a bad review of them so perhaps this year I will experiment.

    The more water-bath canning videos I watch, the more I see that I can accomplish it with just the items I have in my kitchen already. All I need are a few jars + rings & lids. Thanks for doing this video!

    I was always afraid to tackle salsa. Last summer, I found a packet of Mrs.Wages and decided to try it. It was a breeze to make, and I didn't have a mess in the kitchen. I used a mixture of my tomatoes and commercially canned tomatoes 🍅. It came out delicious 😋 Mrs. Wages has an excellent helpline too. Get canning!!

    I love Mrs. Wages Salsa!! I made it last fall and it was a big hit!! Everyone loves it. Her dill pickle recipe is wonderful also. It is still homemade, just the spices are measured out for us. Great job!

    Excellent job with explaining and detailing the process, I've never tried the Ms wages salsa mix I usually make my own from scratch but as easy as this is I may give it a try. You make it look so easy using your frozen tomatoes and older canned tomatoes, I rarely have canned or frozen tomatoes that far back because we eat them up each year. Thank you.

    Happy Birthday! 🥳🎉 With peppers, the skins usually come off easier after roasting, so that might be an extra step to consider before freezing. BTW, you have such a wonderful, easy-going conversational style that makes all of this more "real", like we're hanging out in the kitchen with you ~ like mentioning how the tomatoes smell when you're taking them out of the ziploc bag. Thanks so much for all you do. 😊

    I agree. Mrs. Wages is an excellent product. Also, for the tip on freezing tomatoes. Looking forward to finding out if peppers are just as easily skinned after freezing.

    We canned 42 pint's of this salsa a few weeks ago. We love this salsa, so does my grandkids. You can also get Mrs. Wages at True Value and Tractor Supply in our area.

    I froze some of my tomatoes this year when I was overwhelmed. Good idea about coring them first. I ended up canning them as sauce. Great taste.

    I use this product. Love it. This is so easy. Everything you need is in the packet except the tomatoes
    When I don't have time this is my go to. It tastes good it's easy what more does a person want.

    I made salsa for the first time this year. I used the mild from Wagers Salsa Mix as well. It was really easy and tasted good too. I usally freeze my tomatoes and can them after everthing else is done.

    Love the reciepe and demonstration on canning salsa. We made salsa and took the tomato skins and dehydrated them and ground them down and made a powder good for thinking soups or salsa. Thanks for sharing

    At the end of the growing season I had a ton of green tomatoes I had to pick before the freezing temps arrived. I used them to make salsa verde. Your recipe looks quick and really good too ❣️ Thanks so much for sharing I'll have to try it 👍

    We love salsa! I made hatch Chipotle this past fall turned out so good!
    I dehydrate our tomato skins to make tomato powder, which I add to soups, stews and to top salads.

    My husband LOVES Mrs wages salsa, so I always keep it on the shelf for him, I prefer home made but each their own 😄. I usually make it with store bought canned tomatoes since I use my fresh tomatoes for other things, I do have plans for more tomato plants this year to try to use fresh.

    I freeze my tomatoes whole, too. I just have too much to deal with at the end of garden season so it makes canning my tomatoes so much easier- and I can do it in the cold of winter!
