@RAYRAY307, I am not sure if you are familiar with Asian cooking. The cooked food is used up during the day/night it is cooked. There is insufficient time for it go bad. Moreover, with the recooking with the fierce heat, no bateria, etc. will survive.

It seems that too much oil is poured into the wok to keep things from sticking together, but most of the oil vaporizes (or probably just gets pulverized and carried out by vaporizing water from the ingredients?) and burns away in the quick stir-fry process, creating splendid flambe visual effects as a byproduct. So the finished dishes are not that greasy at all.
Masterful wok skill. Really love the street vibe. I am only concerned about the piping hot food inside that plastic shelves
And not the complete lack of anyplace to wash hands?
Especially the seafood being stored at dangerous levels.
