If you have Celiac for real, you need to stay away from it, not just "do your best." Your life literally depends on it. Celiac Disease can kill you if you don't stay away from gluten.

If you think about it, a sieve is just something that strains out the things you dont want but keeps all the things you do want. So really calling you a sieve isnt an insult. It just means you keep the things you do want with you and let the things you dont want go through you. So dont feel sad about it. Its was a compliment really.

Julien. Celiac here. I've used those tortillas often, so 2 things: 1) it helps to get them slightly wet before you cook them. Like if you have a very misty spray bottle or I just get my hand a little wet & rub it on a little on one side. It's way better; and 2) the size seems awkward but since they break a bit easier then the gluten tortillas you want a little wiggle room. I also don't mind a white corn soft tortilla.
Julen I love your cooking vids for your effervescent personality that especially shines through your filmmaking. But also cause I myself have very restrictive food allergies and I love seeing someone work with those parameters quite joyfully.
