    I can’t wait to try these, they look amazing. Chef John, you have literally changed my life! My kids think that I’m the most incredible cook and anxiously await my next masterpiece. Little do they know that all the credit goes to you. I’m a culinary school dropout who would have loved to have done what you’re doing, but life had other plans for me.       If I get too drunk sometimes I have hyperrealiatic dreams about eating raw chicken. It's really gross. I can feel the slimy texture on my tongue and feel myself chewing through the muscle fiber and getting the white stringy skin pieces in my teeth....and i actually taste it. It's wild. And always unpleasant, I never get used to the taste.

      ⬤ Overnight soaked oats 1:2 in water -> sweet cooked porridge
      ⬤ Overnight soaked oats 1:1 in milk kefir or yogurt or viili-> morning raw porridge + baked nuts+fruits
      ⬤ 2 days soaked oats 1:2 in water with tiny bit of sourdough -> sour and savory cooked porridge with bacon, marjoram and fried eggs
      ⬤ granola
      ⬤ flapjacks
      ⬤ oat flour pancakes
      ⬤ Overnight soaked oats + fresh fruits + dairy/vegan milk -> smoothies
      ⬤ Overnight oats + koji rice + water + pinch of salt at 60 °C -> amazake oatmeal

    1:40 they're called "old fashioned" rolled to differentiate them from quick cooking/instant oats. I think its also marketing, since it makes them sound older and more rustic as opposed to the modern processed instant oats.

      The modern variety of rolled oats is still rolled as per "old fashioned" rolled oats but then they're cut into much smaller pieces which allows them to cook and release their starch in a couple of minutes.

      Well, there is a technological difference between those two oat products: *rolled oats* are made of pre-steamed oat grains that are pressed, which result in just pressed and slightly precooked flakes as we know them.
      *Instant oats* are made of oat flour: firstly you grind the oats to flour, then steam it and create small flakes of it. Instant oats have higher glycemic index and thus you feel hungry quite soon. Old fashioned rolled oats fill your tummy for greater time span.

    I made these yesterday, used all whole wheat and in an 8x8. Turned out amazingly well! Not too sweet, nice bright strawberry flavor. Excellent recipe!

      Very easily. Seems like Pop Tarts have about half the frosting and filling, and much less flavorful pastry, than they did a decade or two back. They're really no longer worth the calories.

      I'm sure raspberry jam or apricot preserves as another poster mentioned would work just as well and actually be quicker and easier because the preserves are ready to go. Really any fruit preserve should work. Maybe even applesauce or apple chunks or a mix of the two. I'm going to experiment.

      ... you have leftover strawberries? Mine never sit around long enough to be left over! I wait for this time all year. My favorite fruits are soft fruits, perishable and short-lived. My eyes roll into the back of my head when I see perfectly ripe, fragrant, dripping-down-your-chin-sweet apricots, berries and peaches at the grocery. The only favorite fruits I can't get where I live, are MacIntoshes, Concord grapes, and cherimoyas. You could always make fruit leather from your abundance, or preserves... and in the winter, it will remind you of warmer days. Xmas presents! ;)

      these are plenty sugar loaded, lol. And also very processed (flours, sugars, and oats are alllll processed). But yea, maybe slightly less crap for you than pre-packaged bars. Still though, not healthy.

      Judy D. You can definitely reduce the added sugar (would recommend). And it’s hard to come by unprocessed flours and oats. There really isn’t a health benefit to rolling your own oats so “processed” can sometimes be misleading.

    I'm baking sour dough for the first time Chef. Used your recipe. I baked my first batch of bread a bit ago. The no knead beer load and it turned out great.

    I made these bars this morning, YUMMY! I used strawberry jam instead of fresh strawberries and was able to put these together in just a few minutes. They were golden brown within 23 minutes and everyone loved them. Thanks chef John! I'll be making these again.

    Regarding rolled oats: technically old-fashioned rolled oats, quick cooking oats, and instant oats are all a type of rolled oat so it is important to distinguish between the three.

      I make a similar bar with about a 1/2cm to 1cm layer of preserves. Apricot preserves are really tasty too :)

      @@ahilaryb Thanks. Apricot would be delicious. I have a couple of big jars of organic strawberry jam from Costco to use up and a couple of small jars of apricot, as well as several containers of oats. Can't wait to try this.

    Take 1\2 cup pecans that have been chopped very fine. Spread evenly over the top prior to baking.
    Substitute fresh blueberries for the strawberries. Or drained crushed pineapple. Add some maraschino cherry pieces. How about diced fresh apples? With some raisins or craisins thrown in?
    Oh,wait! I think I have a baked sweet potato left over from dinner last night.
    Ah, hell. Now I have to go to the store!

    oh, and Old Fashioned Rolled Oats, I think, are the whole rolled oats. The other kind is called "quick oats," so, yeah, there's a difference. It appears you used the quick kind.

    I think these were absolutely lousy as far as breakfast/cereal bars go.
    But this was some of the best Strawberry Crumble I've ever had, and I'm gonna change the shape of the baking dish to create my newest dessert.

      I've made jam where the ratio of sugar to fruit was practically 50/50! I think you could get by with less sugar if you wanted to.

    I'm wondering what this would be like with Traders Joe's Reduced Sugar Strawberry Preserves as the filing and how I would do it. I'd probably just do everything the same and see how it turned out, except I wouldn't have to worry about nooks and crannies so much.

      Use both, fresh strawberries and preserves. Then I'd have some leftover fresh strawberries to dip in chocolate and strawberry shortcake, family favorites.

      Any fruit will work for this. The filling is basically pie filling. The molasses might be tricky since it's a liquid and sugar is a solid.

    How long would these bars keep before going off? Would pepper work in this recipe? I've heard black pepper goes nice with strawberries. Could you add nuts to the top layer for some extra crunch and fibre?

      The recipe is r about nutrition, but yes, walnuts or pecans would be nice in topping. Rather than pepper, which sounds terrible, how about a tiny dribble of reduced Modena balsamic vinegar, at service time, or on the side right next to your slice. Honestly, I don't think his recipe needs improvement. It's a classic. Just my opinion, no need to guild the lily.
