Dear Chef Lenny- I made your veal osso buco with polenta recipe yesterday for Thanksgiving and my guests LOVED IT. It was so delicious and refined, I felt like a professional chef. Thanks so much for explaining all the details that make a big difference (like taking out the fat layer from the sauce ..wow) . Straining the vegetables from the sauce and adding a mix of butter and flour to thicken it made it sooo refined!! what a hit!! The only minor modifications I made were to add butter to the polenta instead of olive oil and cook it with chicken broth instead of water for extra flavor...probably added more than 1 cup of parmesan cheese too! ;-) You have a new FAN! THANKS!! :-)
My parents are from Parma, 🇮🇹 & loved your technique, truly a great recipe. The only thing I would add is dried porcini mushrooms. Great presentation for sure. Diane

A little bit sharing experience, I tried both using oven and instant pot I'd say I still prefer the oven method because the meat stays together although it takes much longer to cook. With instant pot it only takes 35 or 40 minutes but the meat falls off from the bone. in terms of taste both are delicious.

Great classic dish, that's exactly how I prepare it. A nice variant or if there is something left over, ragout ossobuco is also served, the meat is then served in cubes together with sauce to a homemade tagliatelle.

@@loungingwithlenny you are right about that. No flouride tap water, no cooking with aluminium or using gmo ingredients. Home cooking is much better. I've been making osso bucco the same way for over 20 years. The strained sauce thickened with "roux" (neat trick) has taken it to a new level. So good! Thank you!

Threw this together...it was the best eaten this side of the Atlantic. Ol' lady likes the Tuscan pepper beef shorts ribs better...both served on bed of polenta! This really crowns the dish!! Use yellow polenta. Better than white polenta or grits but either can be used in a pinch. Cheers
I watched the video and having made osso buco many times before, it’s how I do it. Never use the vegetables other than for flavour. My question is where was the roux? I normally thicken my sauce with some arrow root powder thinned out. It is a wonderful recipe.
Really like to know what kind of lemon peeler he used, I love strips and dicing them up like that. Seems like it work great in certain dishes rather than using lemon zester. Great recipe and can’t wait to try it out!
