I also prefer it with minced garlic rather than the rub but I like the chef's suggestion, it makes sense why he would recommend a more mild version since this video is going to most likely introduce people to Bruschetta. It's best to start light and add to your liking after you understand the overall taste profile. Some people like it with parsley instead of basil. lemon juice, and no onions/garlic which makes it more like a Tabbouleh Salad, or you can add Pine Nuts and Parmesan if you want to give it a bit of a pesto profile. A lot of variety out there for different seasons, moods, preferences. My recipe/ratios for a 2 slice serving: Mix: 1 globe tomato chunked/chopped into 1/8ths (slice quarters in half) 1/8-1/4 red onion wedge brunoised (julienned, and then diced) 1 clove garlic minced 2 basil leaves diced or shredded 1/2 cup evoo 1/4 tsp/1g kosher salt 1/16 tsp ground black peppercorn 1/4 cup or generous pinch of grated parmesan Top: 2 slices of baked ciabatta or french bread lightly coated in salted butter on each side (slices should be small enough to pick the slices up without the bread bending/folding under weight of toppings, else you may need to toast it extra to make it sturdier. this is finger food, remember. the bread is your tool/vehicle) 1/2 of your Bruschetta mix per slice 3 mozzarella pearls per slice 1/2 basil leaf garnish per slice 3-5 drops citrus juice per slice 1/8-1/4 tsp drizzled balsamic vinaigrette per slice finger sprinkle kosher salt and ground black peppercorns to finish it off
