    My husband and I met Marc last year at Canters. He was so friendly and cordial...talked to us for an hour about a few specific things, and our CA trip will always be one of the best because of that interaction. We will go to Canters every time we are in LA.

    Not buying that Canter's can't maintain it's gold standards without the family running it. Systems and recipes can be taught. That's near sighted-ness talking.
    If you have a legendary place that serves great food, gives great service and has a fun atmosphere... IT'S DUPLICATABLE.
    If you want to expand your brand via more locations Marc, you and your top line people can train and replace yourselves with the next generation of valuable staff members. Repeat that process over and over, under scrutiny of course. Hire an experienced consultant who has done this before. That's step 1.

      I disagree: When faced with the choice of doing something to the gold standard the family established, or doing it in a new way that saves money, non-familial management will typically do the later. And those cumulative choices add up to crap over time. When family leaves, established quality becomes the exception, not the rule.
