- 冷たい牛乳とエスプレッソで美味しい美味しいアイスラテを作りました。
レシピ:
コーヒー豆(深煎りを使いました、そしてエスプレッソ用の細挽きにしました) ----- 25~26g
水 ----- 100g (これで約60mlのエスプッレッソが抽出できます)
牛乳 ----- 160ml (もっと甘くしたい時は牛乳の分量を増やしてください)
The Bialetti Mocha Pot is quite useful for making espresso at home. Today, I'll show you the recipe for a simple iced latte. Cold and delicious.
Recipe:
Coffee Beans ( I used a dark/french roast set at the finer grind size) ----- 25~26g
Water ----- 100g ( I get about 60ml of espresso with this )
Milk ----- About 160ml ( Use more for a sweeter latte )

For concentred coffe with moka:
1) make normal coffe with this moka bialetti
2) use this coffe instead of water for do another coffe
In italy we call this coffe "caffé dello studente"(studend coffe)

You don't have to press the coffee when you use the moka
Hi Haakon, I wanted the espresso a lot more concentrated, so I used more coffee.
Coffee Fukuoka ok, but be careful to the pressure. If you don't pay attention the coffee will splash violently everywhere. ;)
Haakon LC does that not happen every time?
I use low heat to prevent that from happening

From experience, If you press down the coffee grounds really flat, it will take forever for the coffee to come out the top, and when it does it will look and taste like tar. Fluff the coffee, fill it up and smooth the top off with light patting!!

本当に大事なことなので2回書きました。
実際、人によって多少の好みはあるので、ふんわり軽めに入れる人、しっかり口ギリまで入れる人の差はあります。
それによって、好みの味になる重要なポイントだからです。
でも決して押しません!!
ちなみに、ここでは詳しく説明されていませんが、最初の水を入れる量もきちんと決まりがあるので、他の動画で説明されているのを探して、そちらを参考にしてください。

個人的には、タンパーで押すのが全くNGとは思いません(ちょっと多めに入れて少しだけならずためにタンパー使ったりする人もいるので)が、安全弁があるとは言ってもあまり高圧が掛かることことが前提でないのにタンパーで押し固めるのは、味や好み以前に別の意味でちょっと不安になりますね。
でも、出来上がったアイスラテは、おいしそうですw。
something cool you can do, if you want cold frothed milk, put the milk in a french press and slide the press up and down vigorously until you get really frothed milk. Then you can add cold frothed milk to the recipe.
when you ground the coffee so fine and press the coffee when using Bialetti, then you are totally wrong.
so calm 💜 i have a question, when you pour the espresso into the milk, is it still hot?? or you let it cold before pour it??
For this video, yes, it is still hot. So the ice will melt a little. What you can do is make the espresso cold using a shaker and spinning it on ice. Then you don't have to worry about the ice melting, hope it helps ;)
You should clean up the coffee grounds on the edge of the funnel and the boiler just before connecting the upper part to it to prevent the pressure leaking and damaging gasket.
That is one of very basics of using any macchinetta.
Isn't the coffee become more bitter with with tamping?
Please stop saying don’t tamp. He likes that flavor and he clearly does it so it doesn’t splash, it’s personal preference. Not everything in coffee is right or wrong.

Why you stamped the coffee ?
Bialetti even includes instructions stating to NOT tamp the coffee. You're just asking for your moka pot to explode
Can we have some info about your coffee grinder?
Couple of tips: pour hot water it the Bialetti and do not press the coffee (it is very fragile and it will taste better). Pour less milk on the ice but before use a shaker.
Ok, if you are new to moka pot brewing, do not follow this video for advice. Use your moka pot without tamping it down to get used to how it brews and then MAYBE try tamping it but ONLY BARELY. You do not want your coffee to block the water from escaping and either building up too much pressure and damaging your moka pot or worse. And also make sure to clean the rubber seal before attaching the lower basket to the top. This ensures a good seal while brewing. Again, just be careful when brewing. This video is not promoting good brew methods

When you tamp the coffee, how much water do you pour to the pot for low pressure?
Hi Gwangnam, I get about 60ml of espresso with 100g of water. And I am using low heat but just enough so that the espresso extracts smoothly.

what grind of coffee should i use when making with moka pot? are medium grind(v60) is good? or fine grind?
ToTosai i think a grind just a bit courser than espresso is good enough for Moka pots.

Very nice video, nice sounds, quality shots! But coffee should not be tamped in a moka pot and water should be poured inside while boiling hot so that coffee flows faster and the coffee grind does not get burned.

You shouldn't tamp your coffee to use a moka pot. Why you need to scale the coffee beans accurately if you are filling your coffee basket this way?
Hi Sun, I tamp my coffee because I want the espresso very concentrated. 25 ~ 26g is the maximum amount I can fit into the basket, so I measure it.

I never put cold water, never tamp the basket, never use super fine grind. never use a spoon when I pour in the glass :D

Hi Azim, no you don't have to as this is Iced Latte. But there is a frother specially made to froth cold milk so try that if you want to ;)
can anyone let me know why to use the spoon while pouring the espresso ?
I used the spoon to make a layer of milk and espresso. If I just poured directly, the espresso would mix with the milk.

Pretty much how I make my every day iced coffee....tho I make a LOT more than you do. :-) But don't tamp your coffee in the moka filter or the water can't get through. Barista's tamp the coffee in the filter because they're using machines with very high pressure that forces the water through the coffee filter. This isn't necessary with a moka pot. Just a full filter, flattened out with your finger works, and still makes great strong coffee!

Hi Zicen, you can use hot or cold, but hot will be much faster. I'm used to using room temperature water but I don't really think it makes such a huge difference, my opinion though ;)
