🥥🌴 CRAZY COCONUT ICE CREAM | WITH XANTHAN GUM - No eggs, perfect mouthfeel, perfect coconut flavour!

  • This is our answer to all coconut ice cream recipes out there, that just aren't coconut-y enough! We use virgin coconut oil, a beautiful ingredient with an exceptional coconut taste. Most recipes involve the use of coconut milk, either canned or boxed, resulting in an icy ice cream due to the lack of fat; and a weird taste due to these over-processed ingredients. Others use "fresh" coconut, which, unless you are lucky enough to have a coconut tree in your garden, has been lying in a commercial freezer for long enough to become tasteless.
    So, if you are after a coconut ice cream that has a velvet mouthfeel, an amazing coconut taste, and aroma, follow this recipe. And, trust me when I tell you, that in this ice cream, not only the pure coconut taste of the coconut oil will come out singing, but the coconut ice cream will be perfectly dreamy creamy and fluff up like a cloud when churned.
    Ingredients:
    760 g whole milk fridge-cold (26.8 oz; 760 ml)
    175 g extra virgin coconut oil (6.2 oz; if measured in cups, first melt it, then measure it: 200 ml)
    170 g sugar (6 oz; 13 tablespoons)
    ¾ teaspoon xanthan gum (2.3 g)
    You will love this recipe because
    ✓ It is so easy to make.
    ✓ It uses only virgin coconut oil, milk, sugar, and xanthan gum!
    ✓ Xanthan gum creates a full and perfect mouthfeel.
    ✓ It requires minimum cooking over the stovetop.
    ✓ No thermometer is needed! Xanthan gum is added at a specific temperature to ensure proper hydration. However, our recipe eliminates the need for temperature measurements. Our "boiling-hot-milk-into-fridge-cold-cream" technique is a foolproof way to achieve the same result without a thermometer!
    The steps at a glance:
    1. Make the ice cream mixture
    2. Chill in the fridge
    3. Churn the ice cream
    4. Put in the freezer to set

      No, because we need the fat of the coconut oil. Without it, this ice cream will be too icy.
