- This recipe is on salt and pepper chicken wings. It is a signature dish from Canton, China. It's packed with flavor... spicy, garlicky, fragrant, salty and sweet all rolled into one. Hope you give it a shot. Love to hear your comments.
Spicy Salt and Pepper Chicken Wings Recipe
Ingredients:
2 # (907g) Chicken wings
6 cloves garlic (minced)
1 Jalapeno pepper (diced)
½ Small Jumbo onion (diced)
½ Small Green pepper (diced)
½ Small Red pepper (diced)
¼ Tablespoon (7.39ml) kosher salt
¼ Tablespoon (7.39ml) black pepper
¾ Tablespoon (11.09ml) sugar
¼ Tablespoon (7.39ml) 5-spice powder
Marinade:
1 Tablespoon (14.79ml) fish sauce
1 Tablespoon (14.79ml) rice wine
1 Tablespoon (14.79ml) light soy sauce
Pinch white pepper powder
2 Tablespoons (29.57ml) corn starch
1 Egg white
¼ Cup (59.15ml) flour
¼ Cup (59.15ml) corn starch
Directions:
1. Prep chicken wings by cutting off wing tips and make small cut between main joint. Dislocate joint by bending the wing back.
2. Marinate with fish sauce, rice wine, light soy sauce, white pepper powder, egg white and corn starch. Set aside for a minimum of 30 minutes.
3. Mix flour and corn starch in a bowl. Coat the marinated wings. Shake off excess.
4. Heat oil to 375°F (190.6°C).
5. Deep fry for 8-10 minutes or when internal temperature reach 165°F (73.9°C).
6. Remove wings and place on paper towel.
7. Heat wok and add in 1 teaspoon (4.93ml) cooking oil.
8. Add in garlic and onions and stir fry until brown. Add in peppers and cook till soft.
9. Add in chicken wings.
10. Combine salt, black pepper, sugar and 5-spice powder.
11. Sprinkle liberally over wings and continue to toss.
12. Serve immediately.
Serves 1-2

I was just yesterday thinking, Gee haven't heard from the Chef in a while and there you are. Funny thing happened to me a couple weeks ago. For Christmas I got a new smaller Wok, and finally got around to sanding the lacquer off and seasoning it so made Mongolian beef. It heated up much faster than my larger wok, but didn't realize it as I was sauteing the garlic and ginger. I threw in the Asian peppers and scorched them. The entire family was coughing from the fumes! LOL Wow they can be potent when flash fried! The good news though, the Mongolian came out perfect.

Thanks Sheryl. Yep basically the same. Cut tofu into small chunks. Dry with paper towel. Deep fry to golden brown and use the same ingredients and seasoning. I made it a while back and it was da bomb!!! Thanks for watching 😃

Hi chef looks delicious can I ask if you would use the same method of cooking the wings if you wanted to just have original takeout chicken wings
It really depend on who is making it. But my takeout chicken wing recipe is different. The batter has more than corn starch and flour mixture. It’s more of a batter consistency. Thanks for watching
