  • Ciabatta is one of the most widely known Italian breads overseas. In direct translation, it means "slippers," which actually resemble flat, long-lined slippers. The outer shell is crispy, the texture is chewy and often perforated.
    There are also places in Korea that make and sell various Ciabattas. "Lazy Morning." Let's watch the bread-making process here!

    looks a bit raw in my opinion.. :/ I know that the non sourdought bread caramelized and color less during baking. i suggest to use some malt, those look so pail/sad :/ !

      Not the real ciabatta recipe at all.
      Plus they have putted so much flower in them that they couldn't bake properly. Thats poor bread production

      @@Tonce88 no that's how ciabatta is made. They didn't put too much flour in it only on the outside to handle because it's sticky. This is how you make ciabatta.

      @@jacobevenich if you say so.... than i guess my 21 years of experience in bread making its worthless.
      2 things are crucial to the real ciabatta recipe.
      80-85% hidratation and 3 stages of 24 hours total levitation (20 hours in fridge before you cut it and bake it)

      Yes they did add powdered yeast. The worst thing is that they did add levain as well. Probably selling it as sourdough bread. Should be illegal in my opinion.

      It has been a trend in S.Korea for quite awhile. 7 years? It's called ANG BUTTER.
      Butter and sweet red bean paste stuck in between well made baguette or stick pretzel type bread with little salts sprinkled on type.

      I's butter. It's called "Ang butter" and comes from Japanese, where Ang means red bean. Ang butter bread is apparently trends in Korea since 2017.

      @@annayoo5076 보통 밀가루를 덧가루로 쓰게 되면 캔버스천에 달라붙고 밀가루 냄새가 많이나요 그래서 세몰리나를 사용하면 달라붙지 않고 좋죠. 밀가루가 흔하니까 많이 사용들하는데 수분율 높은 제품들일수록 밀가루 를 덧가루로 쓰는것보다 세몰리나쪽이 좋아요

      잘 아시는분 같아 이건 다른얘기지만 여쭤봅니다 보통 작은업장에서는 테프론시트 쓰잖아요 캔버스천을 사용하면 뭔가 확연하게 다른게 있나요?

      @@annayoo5076 일반적인 단과자 반죽과 달리 수분율이 노고 사용하는 재료나 발효 방법이 테프론시트 같은것 위에 놓고 사용하면 금방 달라붙죠; 그래서 발효시키는 동안 안정적이고 작업성을 생각할때 캔버스천만한게 없죠. 어차피 구울 때 옮기지만 반죽이 달라붙지 않은데 모양 유지하고 많은 양을 한곳에 놓기 편하니까요

      I think comments pointing out flaws like this is mostly welcome to reach the point where people around the world actually recognise real, healthy and authentic bread to hopefully eventually reach a point where we turn away from profit and start producing the real deal.

      Much too pale. Ciabatta needs a crunchy crust and no extra toppings. Only a bit of extra vierge olive oil. 😊
