As someone who prefers finger foods, heavy snacks vs. big heavy meals, this looks amazing. I could eat hummus all day everyday but I have to make this and put it in my rotation.

I just bought 2 eggplant from the Amish farmer up the road from me. I’m currently making this recipe as I type. I bought these eggplant just for this recipe. Thanks so much!

Yummy! Thank you! 🤗 I don’t have a gas stove, so I grill or bake my eggplants.

I love this stuff. Very similar to my recipe except i usually throw a few eggplants on my actual wood fired offset smoker when im smoking meats and it get some extra smokiness. Going to try a little sumac which i have in the cupboard and the greek yogurt to see how that changes it 😀

Not if it’s poisonous! The sumac in our spices come from the Middle East

@@TheMediterraneanDish I always wondered about this. I imagine some people are still somewhat allergic, but I'd follow your ingredients. Thank you. PS LOVE the pics of the dishes on your site.

It’s not the same thing! Don’t eat sumac from your yard!

Sounds like a weird question, but do pine nuts taste like pine trees? I mean have that pine-y flavor? I’ve never had them before but don’t really like mint/pine flavors.

Better to make the Tahini separately so you can then control the amount you add to the aubergine.
