This recipe is so good, great tips - peel when raw, cut into the right size wedges, coat with the oil and herbs, roast covered until tender, the uncovered to caramelize them. Yum. I don't have fresh thyme, but might use dried, and maybe use onion powder too. This would be great with any kind of beet, especially the golden/yellow ones.
Eggplants have male and female. The male Eggplants have a dimple on the bottom and they will have less seeds. The females have a smooth bottom and more seeds.

I have Za’atar (Origanum syriacum), a green herb, growing in my garden. Is it okay to use this as a topping for the bread instead of the dry mixture, or combine it with dry herbs?
Hmmm.... I make flatbreads often, and it seems to me, that so much yeast in so little flour will make this taste a bit yeasty. Has anyone made this, and can tell us whether they noticed anything like that? In my experience, anything over 4 cups of flour to one tablespoon of yeast, tastes quite yeasty, unfortunately.
Do a search on the traditional way of making it and see what the measurements for the yeast are to the flour. Then I use Baker's percentages to tweak it. For this recipe, the yeast percentage is appropriate to the flour weight. This recipe needs the yeast because you want the pockets. You may be sensitive to the taste of yeast too...
Why don't you post the measurements in grams? All the conversions from teaspoons, tablespoons, cups and oz feels a bit condescending towards American viewers, it's fine for those that use the old style but scales are ubiquitous nowadays.
@@ObsidianRose10 not sure what you mean by every American citizen, the subset of the population that's serious about baking uses grams, for those that don't use grams, ATK is providing the measurements in oz/cups.
