Never would’ve been able to do this without your help. I know you haven’t posted in a while, don’t know if you even read these comments anymore. Hey Rooster, I have an off-topic question for you.
My wife recently found what looks to me to be a beef slicing knife. It has a rounded end with no edge, and the blade has very small teeth, no serrations. At first I thought it might be a bread knife, but I decided it was probably used for slicing prime rib or ham. The blade is stamped "U.S.A. Stainless" and it's very springy, flexible steel, it could probably be repurposed as fillet knife if I wanted to go that route.
I used my rotary tool to grind off the small teeth and yesterday afternoon I began to put a new edge on the blade. I'm using a King Deluxe #300 grit stone to put the new edge on the blade. I agree with your philosophy that people are way too quick to move to a finer grit stone. The #300 is actually great for blade repair (broken tips, etc.) but I'm not sure it was the best choice to grind a new edge, but since it's the coarsest grit stone I own, it will have to do.
After about an hour of hard work, I have roughed out the new edge geometry. Maybe I need to be more patient yet, and get the edge thinner, but so far it's not very sharp. It will cut paper, but not cleanly, and it's not really a threat to my finger tips (sharpness test).
Do you have any idea what type of steel it might be? I'm guessing it's 420 stainless, but I guess there's no way (at least for me, along with my level of expertise) to tell, without having your level of experience sharpening blades over many years. I'm wondering if it's going to be worth it, continuing the project? I don't want to waste my time on a shit blade, but on the other hand, it's probably a good opportunity for me to learn more about knife sharpening. I'm an older guy, I've sharpened a few knives over the years, but I've only just recently began to develop a passion for knives and sharpening them freehand.
The knife blade is about 7" long by about 5/8" wide (just guessing). It has a small ricasso, approximately 3/4", and no choil. The tang is very short, maybe 2-1/2", with what looks like a 1/8" hole drilled through the tang. I'm wondering what would be an appropriately-sized handle for the knife? By the way, I forgot to mention that I'm sharpening this thing without a handle. It's very difficult because the blade isn't very wide and the stainless is pretty slippery. I think I'm going to wrap the tang so I can sharpen it more safely. My hands took a bit of a beating yesterday, especially since I'm using a Japanese water stone to put the new edge on the blade.
I've been pretty fortunate. I watched a lot of videos before I started sharpening my knives this past week. I put very acceptable edges on three chef knives (one of them is a hand-forged Japanese Kiritsuke, made in Tosa, Japan. The other one is a Dexter Russel 10" chef knife, and the last one is a cheap Chinese 6-1/2" chef's knife that doesn't hold an edge for shit!). I was impressed with the edge I put on the Japanese knife, it was shaving sharp, or very close to it. It's made of Aogami (No.2 Blue paper steel) and it sharpens up nicely. The Dexter Russel, though inexpensive, is an impressive knife. It holds an edge well even though it only cost me $25 six years ago. It was also interesting that "Japan" was stamped on the steel. I guess Russel sourced some sheets of steel from Japan during that time period. It's pretty good stainless steel for such an inexpensive knife.
    Thanks man.

Ha, nice to know that the hot water and degreaser didn't seem to hurt the combo india stone, I got a 10 inch one yesterday at a sale. It seemed to have just been used without any oil on it if the dark streak on the india side was of any indication. It almost totally came off by slathering on some oil and rubbing it a bit but it got me curious about whether it would react differently compared to a natural stone when it came to hot water and degreaser in the event I decided to stop using oil and go to water and a bit of dawn soap. Still sticking to oil though and man, I really like this thing. Thank goodness it was barely used and still completely, or at least almost completely, flat, according to a straightedge.

If you ever come across an Ultrasonic bath for cheap you should give that a try.
With your hot water and Dawn or Purple cleaner it should reduce the time to clean even more.
You will need to place a couple of wooden dowels or plastic painters tips at the bottom.
Seeing as how you would otherwise be contacting the metal bottom of the bath to your stones, and then shaking the heck out of it.

Oh yeah the black Arkansas is an easy one to do. So get you some degreaser. I use purple power for the stuff shown in this video. Set it in your kitchen sink and run as hot of water as you can in the Saint you know to cover the stone and then pour a little bit of boiling water in there with it and then put you some of your degreaser in there. Let it sit for a couple hours. And after that get you a soft bristle brush of some kind and some dish soap I use Dawn and scrub the whole stone with it rinse it off with hot water and let it sit till it dries then you're done you can use it with soap and water.

hey man, I just bought a hard Arkansas stone and I flattend it (it was a bit dished out of the box) on sandpaper from p80 up to p1000, the question is: did I went too fine with the sandpaper? it appears to cut much slower than before, but it leaves a nice mirror finish.
