Y’all complaining about the mixing have never worked in a bakery before. It’s not his bare hand, he’s more than likely holding a scraper. That’s the only way to fold large quantities of whipped egg whites into any mixture. It’s to make sure the egg whites don’t deflate. Any germs get baked off so it’s completely safe and sanitary and required to make such a beautiful jiggly cake. (Doesn’t change the fact that Kraft singles in cake is a disgrace and the guy cutting and decorating the cake should definitely be wearing gloves 😬)

I ordered cheesecake in a Filipino cafe - I got jiggly cake with condensed milk poured over at the table and cheese grated on the top - I wasn't sure, but the cafe owner remained standing next to me with the grater to see if I wanted more cheese. Not wanting to be rude I ate a large chunk and couldn't believe how absolutely delicious it was! But I don't think I'd like processed cheese slices melted in the middle!
