I’m kinda confused, can’t you do the same with two cameras where the eyes should be? Because the previous one looks a lot funnier than just slicing discs.

Yes, but then the user can cheat by closing one eye or the other (to notice the slight difference in size), or if the billboard is not fixed, they can shift around to see other contextual clues. The goal is make it indiscernible through one eye and only discernable through both eyes to make sure that both eyes are working together.
