Hi, I always buy vinegar from the aunties at Margao SGPDA who sell ganvti vegetables. This particular bottle I got from the Saligao Tuesday market but I think it is closed now during the monsoon
I studied in Scotland in the early 1990s and every Indian restaurant was actually Indian and had pork vindaloo. Now, NONE has it because they are run by Pakistanis and the Indian food isn't Indian at all any more. I really appreciate this very different recipe and will cook it next week.

Marination is over but I already added the peppercorns, cinnamon and cloves in the marinade mix (powdered). Hope it doesn't mess up.
It won’t mess it up. Slight change in taste will be there. However, that taste will still be good!

Instead of sugar little caramel jaggery
This is not pork roast but a modified curry with less gravy
