    I forgot to mentioned that since I got into cooking liver, I had a friend who told me a secret on liver years ago...to avoid having that liver (iron) taste, that some people still taste and don't eat liver for that reason , I learned that if you soak the liver in milk, before you season it to cook, about an hour or so, the milk will draw out the blood and taste of the liver and it will taste better... I in turn will clean my liver quickly in lemon and then add to the milk about an hour before I cook them.. the liver will change color too. once you removed from the milk, then you season it to make it the way you want... guarantee to take away that iron flovor that is overpowering.. You do'n't have to clean it in lemon, that I do automatically with all my cooking.. any meat I use, I always clean with lemon and depending on what it is , I will add cider vinegar when I am going to season the meat. Hope this tips will help some of you that will get icky over the flavor of iron in the liver.. , Beef liver comes in two ways, Adult cow liver and then there is calf liver... the calf liver is more tender than cow liver... and doesn't have that strong taste of iron.. I hope this information will help some of you.

      Thanks for the tip! I soaked the liver in milk as you suggested for around three hours and it came out phenomenal with this recipe! The first time I've ever had liver without the liver taste. I'll be making it this way from now on.

    I love liver ( calves liver only ) cook a few pcs of bacon in the pan, then fry plenty of onions in some bacon grease, remove when soft, add floured liver in some bacon fat that the onions were cooked in for a few minutes, do NOT over cook liver, it cooks fast. I like mashed potatoes, with onions and the gravy over the top and smother the liver with the onions and gravy and the bacon slices.

    I was a teenager when I first tried it out at my Aunt place. I saw her seasoned it , then she dpped it in a beated egg, then fold it into flour. Before all she had already cooked up the pack of bacon... and in the same bacon grease she put in the floured liver. and she fried.. prior to that she had already cooked onions rings till they were tender in bacon grease also.. it was on the side. once the liver was fried..it was crispy on the outside and smelling good. she served it with white rice and the onions on top of the liver and one or two strips of bacon too... with a great toss salad and avocado.. Gurl! I was not allow when I was a child to refuse food. you ate what was put on your plate , no questions asked.. well..... I ate and ate.. and now over 50 years later , I still make it the same way and I have had quite a few people say,, noooo don't eat liver, but , they get a taste and then I have a liver eater!..LOL My kids friends would come over for dinner and when they find out, that liver is dinner, I tell them, I will give you rice and salad... you are not force to eat... they sit at the table and watch the family eat, then they look so lost, I would tell them, want to taste, and they would say yes.. and I would give them a bite. and suddenly, they were all in... Their parents would call me the next day and asked me what did I do to their child, cause they wanted mom to cook liver, and she was not a liver eater!..I finally had to invited them over for lunch one day, about three MOMS// and show them how to cook it and the rest is history. I have never try it your way... sounds like a change on my way... I am willing to try. I have had chicken liver in gravy with onions, but beef liver..never... I will let you know when I make some. TY for sharing..

      Yeah Debi, we must've grown up in the same era. Whatever was on your plate, you ate (no choices). That liver you just described sounds out of this world. I ate both chicken and beef liver growing up. I might try making those chicken livers the way you've described...sounds amazing!

    Years ago, I had my boyfriend over for dinner. I served him liver, onions, and rice not knowing he hated liver. He was enjoying it and asked me what it was. When I told him, he gasped and said I hate liver...what did you do? I told him how I prepared my liver. After that, he only ate liver when I cooked it. His mom didn't like that very much. Here's my secret: I only used beef baby liver, because its more tender. I season it with garlic, a little garlic salt, and a little season-all and pepper; I flour it, place in veggie oil and only brown the liver on both sides. Then place rings of onions, water and two packs of Lipton mushroom onion mix for my gravy. Let it cook slowly until the liver is fully done and gravy thickens. Maybe add a couple of teaspoons of flour if needed for thicker gravy. And my boyfriend couldn't eat it fast enough.

      It depends on how thick you want your gravy, I'm old school so I don't measure my ingredients. I suppose a cup and a half. If gravy is too watery I had a little flour. I forgot to say I drain off all the oil after frying. @@joelsantiagosays

    Lol this looks absolutely amazing. My husband “didn’t like fish” until I fried tilapia last week with a macaroni tuna salad on the side. He couldn’t believe it but he’s now a big fan. I haven’t mad liver in years because I’m the only one that eats it... but I have a feeling that that’s gonna change

    This recipe made me think about my mom & when Gina poured the olive oil in the skillet it brought back a memory from when I was little.
    My mom didn't use olive oil for cooking. She kept a small bottle of it in the kitchen, though, and when we kids would get an earache, she would warm up the olive oil and pour a few drops in the sore ear. And that is the only thing she ever used olive oil for.

    My mom use to make liver and onions a lot. As a kid I didn't much like than as I got older I just loved it and still do. Beautiful job.

    I love liver, and I also use green peppers with onions. Only thing I learned to cook when I was in high school, cooked liver w/o butter or gravy, and when liver was cooked you could cut it with out a knife just use your fork. I also made rice pilof. When I get a chance will let you know how I cooked the liver. I even got my two year old nephew to eat it he loved it. Thank you for sharing, as always love and laughter. Just to let you know I am now 63 yrs old.

    I'll Used to cook for Mine Grandma and now cook for my husband. Add belle pepper s maybe mushrooms, carrots and peas. Yes white rice or yellow rice. Yummy !!!

      I am with you! I will not could not in a boat, I could not will not with a goat. I do not like it here or there. I will not eat liver any where...remember Sam I Am...I do not eat liver, that is one thing I do NOT like...but I love me some Gina Young recipes..ooooh wee! hahaha

    As I told you before I m 71 ( had a birthday)& I have learned a lot from you! Yes raised on Liver & I really love calves Liver but .. only thing is I don’t cook mine as long as my momma & grandma did! 👍😌

    Liver and onions are one of my favorites! I even loved it as a child. Sometime mom would make liver and onions then other times when she would just flour and fry it up so we could make sandwiches. I eat my liver sandwich with mustard too, just like my Daddy!

    My mom used to make liver and onions. We kids weren't that fond of it, but we ate it.
    But as an adult, I like liver. When I do a turkey, I save the liver for myself. With a little salt, it is very tasty.
    But my spouse won't eat liver. So I never make liver for us. Last time I made liver was when my spouse was out of town for a couple of days. And then it was chicken livers. I made a whole mess of chicken livers. YUM!

    I'm 80 years old and cooped up because of the virus, going on 11 months, and I've lost my appetite. I look at cooking videos and try to find something that appeals to me. After not having liver for probably 25 years I started craving it but had to buy it online and pick it up at Walmart 25 mi away cuz nobody else had it. Well I have enough for about eight meals in my freezer so I'm very happy. I've had two meals already and it was delicious. I added green peppers to mine too. I didn't put as much seasoning in mine but I might try adding a few of the things that you used.

    I absolutely love love me some liver and onions!! My grandmother used to cook it for me because she knows just how much i love it,although i havent had it in a long time,its about time i make me some really soon cuz its soo good exspecially with a nice side of dry white rice! I would fix me a huge mound of dry rice and then spoon some of the gravy and onions on top of my rice with a nice piece or in my case,pieces of liver on top of the rice and gravy....then oh my my my im ready to dig in!!! And it will be oh so good and i often go back for seconds cuz i love it so much its really good,liver and onions is one of my favorite dishes,and the liver is so tender!!!! I love it!!!!!

    I just made liver and onions on Monday!! When I was growing up my Mom made the BEST liver and onions and I make it the same way she did. I tell anyone who hates it that they just haven't had it made right yet. ☺

    We were taught to try anything once before saying you don't like it. My mom learned to cook on a wood stove from her mom who was a stumpeddown good cook. She married my dad and his mom was from central Louisiana and cooked creole. So she learned from two darned good cooks. She cooked her heart out so her little kitchen always had somebody coming in to taste.
    She could cook some liver and gravy but only cooked the liver twelve minutes and it was always cooked and never tough. I do mine the same way but I like calf's liver and creamed style corn as a veggie or buttered spinach with sliced boiled eggs on top as the veggie to accompany this.

    I love liver & onions. I grew up on a farm in Ponder Tx, I didn't eat from a restaurant or grocery store till I was 14 years old. We ate our liver with white gravy after we fried & let it sit in the gravy on low. It's soooo good!

    My mother tried her best to get us to eat liver & onions when I was growing up, but for some reason we just couldn't do it. I wasn't until I grew up I could appreciate good ole down home cooking. Thanks Mom for being so understanding! Thanks Gina for another flashback!!😇😇

    When i saw the title i almost hurt myself to get here. I love you for making this. I crrrraaave this dish aaaall the time. Nobody seems to make this anymore. I need to make some now bc i cannot get rid of this craving now. Bless you and your comforting teaching and talking style that we all love.     Hubby wouldnt eat it until I cooked it for him. Decided he really liked it my way . Our little kids would remind me when we didnt have it for a while! They all liked it with lots of onion and gravy.

    Gina, as a child I became very anemic. So much a few times I passed out. My granny fed me liver everyday for lunch and got me well. So happen I loved liver. To this day this is still a favorite of mine. Can't wait to try your way!!

    i hated liver up until i was 45 yrs younger..bcause i was listening to ppl saying liver is nasty..the reason for trying it when i was 45 is bcause my doctor said my iron was too low..he put me on iron meds n told me to eat liver twice a wk..now i like liver..now im gonna try it your way..thanks and keep cooking..

      In The Kitchen With Gina Young I did cook my Liver your way & O my goodness the meat was sooooo tender! I have never taken the time you did to cook my Liver. I knew NOT to overcook like my grandma did but O my this will be my way always from on!! See you can teach an old woman new tricks! We NEVER get to old to learn! Smother Liver & onions is the key!     I read that in the past there was less anemia in women because they ate more liver and used cast iron cookware, so there was always more iron in the diet? I tried to get myself to eat it! But, when you have the anemia raw meat is 'out'! I didn't even walk by the meat case at the grocery! Everything had to be reheat & eat until I got over it. I know Grandma liked it, she talked about it, but I think only one of my sisters ate with her & gizzards too. IDK how you got to eating so many, many different things? I made your beef & broccoli with brown rice tonight. I used instant so it was faster. The whole family said the house smelled so good! ; ) Not one drop leftover. TY.

    This is my All time favorite dish! I could eat Liver and Onions everyday. I have to go in the freezer now to take some out for tomorrow 😊. But I use only Calf Liver. Pork is not good and is tough. Thank You again Gina! God Bless You and your family!

    My Mom & Dad made liver and onions when I was growing up. They would make it about 5 times a year. Smothered in gravy over Riceland white rice. 💚 We always had home cooked meals. I don’t make it as often as they did but I make it and it is soooo delish, too bad I am the only one in my home who eats it! 🤓
