Hm, I like the simplicity of this, it doesn't require to get all things fancy for that 'authentic' taste. One thing I change though is tye use of brown sugar, instead of honey and white sugar.

Mirin is sweeter and contains some alcohol and rice vinegar is more acidic but has no alcohol...

I used soy sauce that was too salty to eat, check the sodium content.
Way too much sugar. Will spike one's blood sugar. Maybe can make with Erythritol instead of sugar for a lower glucose attack
