    I just made this tonight. By far the best Teriyaki I have made in about 15 years of trying to get it right. Easy instructions and directions. So simple and perfect. For the weight I just used a foil covered brick. It was perfect.

    Using a plate to press down on the chicken to cook it evenly for thighs, genius. I would never have thought of that. This is going to step up my game for me. Thank you.

      That's not bone out and spread out. Too thick. It is still curled up. That is a gigantic chicken thigh. Watched a Japanese chicken wing video earlier and I gotta say, their chickens are built different. Perhaps a different breed than in Canada where I'm at. Went to a farmers auction recently and I gotta say, lots of different chickens out there.

      @@morganarutsatz6736 It's a whole leg deboned, it's the thigh and drumstick. The 'hole' is where the knee joint usually sits.

    I liked that you added the sugar separately from the sauce. That seems smart as putting sugar in with the others ingredients in a bowl…the sugar mostly stays at the bottom of the bowl instead of the pan. I will do this from now on.

    Just made it tonight. I bought the real sake, mirin and soy sauce inproted from Japan. As most of the ones you grt in the uk are zero alcohol but added sugar.
    The sauce tastes completely different. Its much more sharper and umami, than the incredibly sweet stuff you get premade.
    I also cooked my purple sprouting broccoli in the chicken fat once I had removed the chicken. Lovely!

      Isn't Mirin just sweetened cooking sake?

    I love to add a little fine chopped garlic and ginger to the teriyaki sauce... roast before adding the liquid ingredients. Some sesame seeds add even more flavor. I really like how the chicken was initially prepared without oil or other fats... will try that for sure! Thank you for the video.

      That sounds good, but I would also add onion, and caramalize the onion, so onion is not pungent.

    A small tip for your own safety:
    Your cutting board moves a lot when you use it.
    If you put a small towel you use for drying dishes or a small, slightly wet cleaning cloth under your board, it will not move!!

    I've never heard of fuki before, apparently in english it is called "butterbur". This recipe seems very easy! i will have to try it.

    This was very interesting. When I (non-Japanese) prepare teriyaki it’s soy sauce, oil, lemon juice, brown sugar, ginger, garlic and freshly ground pepper.
    After watching this video, I think maybe I never knew what teriyaki was after all…

      Ordinary frying teriyaki is just pretty sour compared to a sweet dipping sauce, that we used to much more often in other countries. You can find it in the stores as well, but its usually hard to tell which is which, and it'll have some thickeners in it.

    Love simple dishes that are at the same time extremely flavorful. Toast some sesame seeds and sprinkle on top, get some fresh green onion or even stir fried veggies, a bowl of fresh rice. Such a good foundation to go completely wild with the rest of the meal.
