Inspiring story. Most Japanese restaurants or businesses have a rich back story on it. I love how they do it with passion and love of their craft. A trait that is rare in this modern world.
The levels of dedication and work ethic I have witnesses by the older owners of these restaurants is truly humbling and inspiring. God bless them. Thank you Japanese Food Craftsman for another great video.
He seems the kind of person that works because he actually loves that job. Working also helps keeping people active and feeling fulfilled. Surely that food is prepared very carefully. And looks very fine and good.
Westerners often say that old people should not work, but in fact, working is what keeps them healthy. If you quit working and do nothing, your muscles will lose strength and you'll get senile. 81 years old is beyond the average life expectancy of Westerners, and many old people in the West are bedridden. And yet he's able to stay healthy because he's working like this.

That's long hours. I hope he takes lots of breaks. I feel that a lot of elderly people enjoy working. It keeps them busy and young. My mom is a retired teacher but after a few years, she started working again because she was bored at home
Restaurants is the most difficult business. The profit is small, the work is harder both mentally and physically. Some restaurant only have 1 day off if they're lucky. I applaud people who owned a restaurant 👏
I think burdock heaven soba or geso heaven soba is justice. It's a wonderful shop that clearly reflects the spirit of the owner's father, or the idea, and I want to come to the shop soon.
Very admirable indeed to be 81 and still working. Not to diminish his hard work and long hours that he has put into his shop. But to me it seems fruitless to be a ramen shop owner in japan.. The fact that he is working well after retirement age shows he either loves the job so much (unlikely) or that even having owned the shop for 30+ years he cannot retire because the margins must be quite small.. I noticed a customer paid 1000 yen for a bowl and got maybe 100 yen back so not even 10 dollars a bowl, With few ingredients but the cost of the owner is still quite high since all things in japan are not the cheapest. Don't get me wrong. I believe the Japanese are the hardest working nation in the world, were literally thousands of people have worked themselves to death.. Not because they were forced to but because an old school tradition/belief that are so ingrained in them as even children. (literally mentioned it at the start of the video)

That's why Japan is the most advanced nation both technologically and ethically. Their people are the most mannered, cultured and that's well known and famous all over the world. Regarding profitability....explain me why their currency is so undervalued. Their economy is still the 2nd or 3rd largest but currency still much lower than say the UK. Does that make any sense. UK doesn't even have the technology or fraction of the number companies that make up Japanese economy. Why is the UK currency valued so high, why international trade is done in dollars? Tells you a story on who manipulates global trade. It's also not the amount of gold reserves that decide a country's currency value.

Working hard is great and all,but this is reaching the point of working yourself to death,type of unhealthy. Rest is just as important as hard work. And I don't think a senior should be working 15 hours a day. Christ even for a normal worker,that is too much.

@@thecook8964 i was a chef for years mate, I know what it's like. I've totally found my calling, I went into a new industry at 31 and I'm loving it. My point was that there are incredibly easier ways to make money than this, the average chef isn't working as a chef because they feel like they have tons of options. It's just easier (in the short term) to stay in the same job, than it is to learn how to do something new.
The older man should retire, his plating skills are NOT as good as the others, he is not draining the water enough on the noodles, and not putting enough broth in the bowl.

初代から2代目に代わったは良いのだが、かき揚げの中が半生で酷いです。代が変わって一気に110円に引き上げたら、名物のゲソ天も注文減ってメニューから無くなった💦値上げするなら揚げ方勉強して来いと言いたい!

この店はゲソ天を辞めたから行く価値なし。爺さんの店員はツユが少ない(ツユ多めとお願いしても無視する性格の悪さw)。お兄ちゃんの店員はツユたっぷりでサービス精神あり。ゲソ天が無い今、ソバ単体ではうまくもなんともない。

@@kazuyachatani6021 それはないw もともと、この店は六文ソバのゲソ天が食べられない時の代打的な立ち位置だったのよ。だから、ゲソ天がないから二度と行かない。ゲソ天が復活しても、たぶん行かない。基本的スペックは全ての面で六文ソバの方が上だからね。
