Plus it’s safer trying to do tricky pours with a smaller container and you’re less likely to spill. Clearly they managed fine as-is. But there’s no point making things harder than they need to be.

I used to be a baker for a giant general store - and besides the classics I got to make up some not-so-cursed specialty loaves, like cheese, salami, onion, spices and tomato. It was basically a deli sandwich all baked into the loaf. Very easy to make - just cut semi-frozen dough into cubes - about 3/4 inch - chop the other ingredients and stir them into the dough cubes with some egg as a binder and pour into loaf pans. The dough cubes with egg binder strategy can allow you to make all kinds of bread with ingredients that wouldn't normally work mixed into the dough. For instance, the acidic tomato would normally kill or cripple the yeast, but with this method it stays in the 'veins' between the yeasty dough cubes, so you don't have to resort to the oil soaked sundried tomatoes, or tomato flakes that commercial bakers often use for "tomato" breads.
My mom used to make a candy cane ice cream that was literally just crushed candy canes in whipped cream and then freezing it. And I can concur, it’s amazing.
My local liquid nitrogen ice cream place uses a blow torch underneath when it's frozen the bowl. It's like a whole extreme show 😂 and it's SUPER creamy

The 4H building at the MN State Fair has honey and sunflower seed ice cream every year and it is one of my all time favorite ice creams. Honey and nuts definitely a good combo.
The reason the peanut butter one feels creamier is because of the fat content. The less water content and more fat, the less ice crystals and better emulsion

You put a big pile of whipped cream on a plate and use a potato masher to press vanilla ice cream (or any other flavour you like) onto the cream. Tadaaa it looks like a plate of spaghetti! Now add strawberry sauce and small bits of white chocolate and enjoy 😊 the frozen whipped cream is the best part!
I disagree, I‘ve always found that part disgusting and started ordering it without whipped cream (which isn’t that uncommon of a request, so I’m not the only one)

I definitely think custard ice-cream is superior, but its no longer the standard. Cream-only ice-cream works perfectly well and is what most commercial ice creams are these days. Definitely the right choice for this stream. But if you do make a larger batch of a single flavour, in your own time, a custard base is well worth the effort. Instead of vanilla I like to do cardamom - you can just infuse the milk during the custard making process. Use a tea ball for easy removal.

We made Ice cream with liquid nitrogen in chemistry class in school during summer! Zero safety measures where taken. I think the only rule was no open shoes (but that was a standard rules for chemistry classes) but the results were always surprisingly good for stirring by hand and not using any measurements and somehow no one of the group of 24 16 year olds lost any limbs. xD

the pickle ice cream probably tastes like yogurt because the same process (lacto-fermentation) is used to make both pickles and yogurt! pretty much anything fermented that way tastes amazing imo
wild to hear that the liquid nitrogen ice cream shop is claiming that faster freezing = creamer icecream. because my dad worked in an actual icecream factory that sent him to school to understand why icecream does what it does. and the most common comment he gives when we try cheap icecream is "it's all frozen too fast and cold!" because it makes the crystals big. according to him its the constant agitation (and the addition of fat) that keeps bigger crystals from forming. that's why icecream machines have a part that moves almost constantly. (and why all the "best recipes" wanted egg) .... or at least that's what i remember hearing from one person with a certificate in icecream from over a decade ago...
The freezing too fast/cold is because it's not allowed to aerate enough before being frozen. So yes, nitrogen makes smaller crystals because a slow freeze allows them to join together the longer it takes, but the if it's too fast that there's no time for air to incorporate between the crystals, that's why it was extra crystal-y in the shop.

One thing I noticed right away is how Katelyn kept saying that the liquid nitrogen ice cream was supposed to be “creamier” but really it said on the store wall that they went too that liquid nitrogen makes smaller ice crystals which makes it “smoother”. 42:41 hot black tea w/ milk is basically chai- at least in Pakistan, that's what its called. we brew the tea in water first, and then add milk near the end of the brewing time so that we don't have to babysit it too long (because its on a stovetop usually in a saucepan)
So, I've put a sprinkle of soy sauce on vanilla and caramel ice creams, and it is delightful! Just don't add too much! A mix of the hot sauce and rice crispy could be good.

a favorite snack here is a marshmallow treat recipe skipping the rice crispies and replacing it with Gardettos original snack mix. the sweet gooey pairs well with crunchy, salty, tangy, and mildly spicy is great! now what it would do in ice cream is up to you to try.

I know I'm late with my ideas, peanutbutter ice-cream with little chocolate chips. The cinnamon toast crunch would be great with a peach something, ribbon or chunks. It would be like a peach crumble!
Air friers don’t need the grease and oil of a traditionally frier, so it’s arguably healthier because less oil = less calories and/or less fat. It DOES crisp up stuff wonderfully. We have used it for chicken wings, potatoes (smash a baked potato and brush some olive oil on top), chicken parm (breadcrumbs that have real parm on chicken; add tomato sauce and mozzarella at end) and super moist pork chops. You can also dehydrate things in an air frier. Might be fun to compare! :)
I have an old-fashioned icecream maker, which requires freezing one part for 24 hours. Sadly, my icecream cravings rarely warn me beforehand, so it's been years since I used the thing. I really should try it again.
In university, some of my fellow Asian students whipped up milk tea how they would at home. Traditionally it’s milk in a pan and the black tea bags placed in to simmer and brew over a LONG time. While often sweetened it doesn’t have to be. As for the BEST decaf black teas, Typhoo or Yorkshire. :)
tip: you could multiply the base in a larger bowl and keep it refrigerated, just total volume, devide by how many times multiplied and just pour... saves a lot of time. and for flavours: Orange ice cream, some orange coloring with white chocolate bits and fresh cut orange, some lemon hard confite and shaved roasted almonds. Mango, coconut flakes or rasp, passion fruit. Rice crispy s, butter vanilla flavoring, cut up strawberries and after finished product pecan bits and drizzle maple syrup ooh and, base, Cocoa powder, coffee, after finished product, just some grounded coffee a pinch, and rice crispy s, optional: caramel drizzle or dark chocolate bits 👌🏻👌🏻
Raspberry jam, cookie, and dessicated coconut, it'd be an Iced Vovo biscuit in ice cream form. Might get my housemate to make that next time she makes ice cream

Quick tip on pouring LN2, pour it from the main tank into an insulated thermos for more control when pouring small amounts into tight spaces.

One thing I noticed right away is how Katelyn kept saying that the liquid nitrogen ice cream was supposed to be “creamier” but really it said on the store wall that they went too that liquid nitrogen makes smaller ice crystals which makes it “smoother”. Now one could argue that those mean the same thing but to me they don’t.

42:41 hot black tea w/ milk is basically chai- at least in Pakistan, that's what its called. we brew the tea in water first, and then add milk near the end of the brewing time so that we don't have to babysit it too long (because its on a stovetop usually in a saucepan)
In the US when someone says "chai" they are referring to masala chai.

As someone who got an Air fryer for christmas, the hype it that the food tastes awesome and crispy, but there isn't any grease, so it doesn't upset my stomach. Also it's much faster then trying to bake something even in a toaster over.

I wonder what orange sherbet with honeycomb cereal (or just honey) in it would taste like. I always associate ice cream and milkshakes together. So, anything that is good with a milkshake might be interesting as an ice cream. Sometimes, I will freeze the last half of my milkshakes and eat them as ice cream later.

a favorite snack here is a marshmallow treat recipe skipping the rice crispies and replacing it with Gardettos original snack mix. the sweet gooey pairs well with crunchy, salty, tangy, and mildly spicy is great! now what it would do in ice cream is up to you to try.

I make no-churn peanut butter all the time! It works really well and is a favourite with family and friends. I also highly recommend no-churn salted caramel ice cream!

Kitchenaid has a ton of attachments, even one to make icecream! You pre chill the thingy thing and attach it to the mixer for it to mix and chill it.

TURKEY DINNER ICE CREAM! I had a thanksgiving dinner pizza one time that was so good. It had Gravy Sauce, Turkey pieces, Mashed potatoes with cheese and cranberry sauce drizzled. That in an ice cream would be so weird and cursed.
with the milk tea ice cream, you could leave out the boba, but swirl in some of the brown sugar syrup that the boba is in, kinda like a strawberry or peanut butter swirl, i think it would taste really good in combination with the tea

I know I'm late with my ideas, peanutbutter ice-cream with little chocolate chips. The cinnamon toast crunch would be great with a peach something, ribbon or chunks. It would be like a peach crumble!
Someone suggested avocado!, the creamiest and almost no flvor soooo add any flavor.
Air friers don’t need the grease and oil of a traditionally frier, so it’s arguably healthier because less oil = less calories and/or less fat. It DOES crisp up stuff wonderfully. We have used it for chicken wings, potatoes (smash a baked potato and brush some olive oil on top), chicken parm (breadcrumbs that have real parm on chicken; add tomato sauce and mozzarella at end) and super moist pork chops. You can also dehydrate things in an air frier. Might be fun to compare! :)

I have an old-fashioned icecream maker, which requires freezing one part for 24 hours. Sadly, my icecream cravings rarely warn me beforehand, so it's been years since I used the thing. I really should try it again.
In university, some of my fellow Asian students whipped up milk tea how they would at home. Traditionally it’s milk in a pan and the black tea bags placed in to simmer and brew over a LONG time. While often sweetened it doesn’t have to be. As for the BEST decaf black teas, Typhoo or Yorkshire. :)

tip: you could multiply the base in a larger bowl and keep it refrigerated, just total volume, devide by how many times multiplied and just pour... saves a lot of time.
and for flavours: Orange ice cream, some orange coloring with white chocolate bits and fresh cut orange, some lemon hard confite and shaved roasted almonds.
Mango, coconut flakes or rasp, passion fruit.
Rice crispy s, butter vanilla flavoring, cut up strawberries and after finished product pecan bits and drizzle maple syrup
ooh and, base, Cocoa powder, coffee, after finished product, just some grounded coffee a pinch, and rice crispy s, optional: caramel drizzle or dark chocolate bits
