How to Make Fideos -- A DELICIOUS, SIMPLE, Authentic New Mexican Side-Dish

  • Hey Chile Heads! Today, we're going to learn how to make a classic New Mexican side dish: fideos. Fideos are so simple to make and are a nice last-minute side dish that pairs with any New Mexican meal! My family absolutely loves to see a side of fideos at the dinner table -- they're just so delicious. You've got to try this recipe!

    Fideos
    Ingredients:
    15 oz. package fideos (or angel hair pasta broken into small pieces)
    1-tablespoon canola, or olive oil
    1-tablespoon tomato paste
    One 8 oz. can of tomato sauce
    ½-teaspoon salt
    ¼-teaspoon pepper
    2 cups water
    Directions:
    Heat oil in a medium sauté pan, add fideos and cook for about 2 minutes, until noodles begin to turn slightly brown. Add tomato paste, and mix until fully combined. Next add tomato sauce, water and bring to a boil. Add salt, pepper, and garlic powder. Let boil for 1 minute, and then turn the heat to simmer, cook until the noodles have softened and all the liquid has been absorbed. Some people like their noodles a little “soupier,” so adjust them to your liking. Add more water if you want them with more liquid, or less if you want them with a thicker consistency.

    I am so happy I found your channel. I visited New Mexico for a week in October 2020 and fell in love with your state, its food, and its people.     Do i boil until all water is gone or should boil then drain it out when the flavor is inside food????

      Hello Olivia! No draining the water here, just let it slowly absorb into the noodles. Once all the liquid is absorbed, your fideos are done. Thank you for the question!
