I have cake levelers for several different size cakes & I use my knife the same as in this video & they come out perfect each time plus I can get the layers as thin as a quarter inch! As for the “one with the wire”, that’s not a “leveler” at least mine says it’s not a leveler. It’s just to make the top flat!

The problem is I would like to know what if you have used this device and found once you cut your layers they are uneven which is the best way to get them even again?
that's why I don't recommend using them, I've never seen one that didn't bend and leave uneven layers since they are just so very thin and pliable. My knife is super strong and doesn't bend at all. honestly if you use a leveler and are left with uneven cakes I'd say do your best to blance the uneven sides, if one side is taller match it up to the short side on the other layer. The center will be uneven but hopefully the over call cake is even. Trying to fix it by cutting more and more and more and more off will leave you with almost no cake and a lot of scraps.

Use a wet paper towel wrapped in aluminum foil folded to about 2". Wrap around pan and fold down press any against bottom and make sure that the pan sets level. This keeps the circumference from cooking faster than the center pushing uncooked batter toward the center. Results no dome in center.

hi ashlee. do you level your cake before or after freezing ? coz whenever I level the cake after freezing & thawing, sometimes the center of the cake is still hard
great question - after - I don't want to cut into it before freezing that would release a TON of steam and moister, and the whole point of freezing while it's warm is to trap that steam in the cake. Just let it thaw completely before leveling and you'll be fine. honestly I carve my cakes frozen so a little frozen center doesn't bother me
+Ashlee Marie Cakes btw, for time saving, can i freeze a cake that has already buttercream filling (just filling, No crumbcoat/frosting) ? I'll wrap them tightly though.... thanks for your advice
you can chill them for a few mins, but I personally wouldn't freeze them, but you can freeze cake and you can freeze frosting so other then the condensation causing issues it is safe

I sprinkle a bit of sugar on top of each pan of batter before baking & this helps eliminate rounded tops & the need to cut. No crumbs to deal with.
