Ingredients:
500 gram Torai (ridged gourd)
2 Tomatoes (tamatar)
2 onion (pyaz)
1 tablespoon Ginger Garlic paste (Adrak Lehsun)
1/2 tablespoon Turmeric Powder (Haldi)
1/2 tablespoon Kashmiri Lal Mirch powder
1/2 tablespoon Coriander Powder (Dhania)
1/4 tablespoon garam masala
Salt to taste
1/2 tablespoon cumin seeds (zeera)
Pinch of Asfoetida (heeng)
3 tablespoon mustard oil (sarson tel)
1/2 cup coriander leaves

After seeing your cooking way, today I prepared ridgegourd curry the same way as of yours. However, I put panchfuran i.e. mix of funnel Seed, mustard, jeera, methi dana and kalonji. I do not have hing so did not add. I will not add garam masala as I do not have that as well. Let's see how it will taste. Currently in process of cooking.
