Waste of energy in cooking a tender vegitable like turai for 15 to 20 minutes on a flame. I peeled and cut the turai and half blended them in a mixer. Sauteed with onions, tomatoes, garlic and ginger. Kashmiri red masala, haldi and garam masala. Salt. I skipped the black pepper because black pepper breaks the masala taste of the added ingredients. Topped with fresh coriander. Used sunflower oil for its light and tastelessness and to make it vegan. Desi ghee is animal fat with a strong flavour. Everyone loved what I made.
The thali and the katori from which you served the sabji into the thali 👌. Added to the rustic appeal. And the soft phulka. I can eat this every alternate day, specially after a heavy meal in lunch.

Try oil + cumin + torai. No water. Cook on medium flame first with vessel covered until it gets cooked in its own water. Then turn to high heat (while occasionally stirring) and cook until all water has evaporated. This concentrates the true flavor of vegetable.

While cutting, one needs to check if any Turai is bitter. Like in the case of cucumbers. Bitter ones need to be set aside, or the rest of the preparation will taste unpleasant
