  • Dry January 1904 Temperance Drinks - Cocktails After Dark
    Mocktails or the art of dry or alcohol free cocktails, is as old as the cocktail itself. All of our cocktail books pre - prohibition contain recipes for virgin cocktails. Si of you are sober curious and looking for non-alcoholic drinks / non-alcoholic cocktails - here's a few dry January ideas.
    Horse's Neck.
    Use large fizz glass.
    Ice, 3 lumps.
    Lemon peel of 1 whole lemon cut in one long string and arranged in glass, allowing one end to hang over the edge of the glass.
    Ginger ale (imported); fill up glass.
    Serve.
    Phosphate Angostura.
    Use thin, medium bar glass.
    Acid phosphate, ½ teaspoonful.
    Angostura bitters, 1 teaspoonful. **
    Lemon syrup, 3 dashes.
    Seltzer; fill up glass.
    Serve.
    ** Just so you know - most bitters are made with alcohol. So while the bitters themselves are usually around 40% alcohol by volume, the amount used in relation to the drink still means this (legally) qualifies as non-alcoholic. But in the strictest sense any cocktail made with bitters will contain some alcohol; but then so does bread, and many other foods that don't list negligible amounts of alcohol.

    I stopped drinking in September of 2022 and I'll admit, its easier to have a mock-tail in your hand than explain why your drinking water. Thanks for the lesson in Temperance!

    The phosphate drink recipe reminds me of what we in Australia call “lemon, lime and bitters”. It’s an Aussie pub classic. Very refreshing 😁

    This is excellent. It's great to see non-alcoholic drinks being made, presented and talked about in the same manner as alcoholic cocktails. It is about having a special drink and not about alcohol. Glad there is more coming!

    The Phosphate Angostura looks really intriguing. The challenge I have with a lot of non-alcoholic cocktails is the amount of sugar in many.

    LOL on the 'damp January' it's the 1st I've heard of that one. Maybe next episode talk about the differences in club soda, seltzer, tonic water, sparkling water etc.

    I'm definitely down to try a Horse's Neck one day. I wonder if using Lime would be a Donkey's Neck and if using both would be a Mule's Neck. Drink for thought.

    Growing up, one of my dad's sisters lived in the Kansas City area. They were members of several country clubs. And at least several times, my brothers and I would be taken to one of them to swim for the day. In the evening, my parents and my aunt and uncle would all meet in the clubhouse for dinner. They always had a cocktail beforehand and that was my first introduction to a "Shirley Temple" It sure made a kid feel special to have a drink at the same time as the adults did. And I still like them occasionally.

    Just using the whole lemon rind for one drink...would be pure luxury in 1909! ( depending on where you lived) I would imagine lemons were dear at the time.

    My household is alcohol free due to some health issues, and it's always nice to see ideas for non alcoholic drink options. You are so right about the social aspect of holding a drink! My husband and I have started taking cans of Liquid Death with us to gatherings because it's kind of looks like we're holding a beer can. I always enjoy your channel and appreciate your videos!

    I had a lemon thyme gin & tonic at a restaurant recently, made without the gin (nearly 3 years sober). Also, my wife has challenged me to come up with mocktails for when friends come to dinner. I will be following all Dry January.

    OMG yes. As somebody who drinks very rarely, I hate walking around events with bloody glass of water or a can of pop. I want fancy drinks toooooo

    Sometimes it's nice to have NA cocktail options when you are out with friends but you are driving - this way you get to avoid the people pestering you about not having fun just because you aren't drinking!

    I never heard of Dry January until this year. Maybe because I don't drink. I would try both of those.

      I've only ever heard of Sober October. Never Dry January, which is a decidedly less catchy name.

    I think you should add this as a regular part of the After Dark series. Alcohol is revolting to me, but I do love fancy drinks in fancy glasses with fancy garnish!

    I'm a huge fan of phosphate sodas. My drug store has an old time soda fountain and we can still order strawberry and vanilla ones, delicious!

    I got some of that elderflower syrup you can get at Ikea and put a couple of dashes of Ango in it the other day. I'm definitely going to be putting it in a lot more things now just to see where it goes because somehow it did really enhance the floral notes I got out of it.

    This is great. As someone who (mostly) gave up alcohol due to illness a few years ago I really appreciate this (although your regular series is still enjoyable and reminiscent of cocktail-hopping here in Los Angeles in the 90's). At Thanksgiving I made a Cranberry Shrub (homemade cranberry syrup with a little vinegar served with club soda and I garnished with a lime) for my alcohol-free guests. I think I saw it on America's test Kitchen but it was a delicious hit and felt more "adult" than just a sweet cranberry drink. I'd be curious if there is any history to that. Of course you could add vodka if you wanted a little more ooomph.

    I quit drinking almost 2 years ago (I've had a couple Belgian beers in that time but compared to how I used to drink that doesn't even count) and I really love this idea for a series. Lemon peel in ginger ale sounds great. It's nice to see something other than a Shirley Temple.

    I've lost two siblings to alcoholism, there was alcoholism on both sides of my parents generation, I've got several nieces and nephews who are alcoholics. I stopped drinking when my first brother died of alcoholism. I read Harold Johnson's book Firewater: How alcohol is killing my people and yours (U of Regina press) and it has entirely changed my thinking about drinking. Prohibition didn't work (it would be a better world if it did) but the more people who remain sober the safer it will be for non-drinkers and drinkers alike.

      On the other hand I hate when people associate drinking a lot with alcoholism, it’s only a “disease” if it effects your life negatively, it’s different in America but here in Germany I know very few adults that don’t have 4-8 drinks per day, I counted in the last week I had average of 7 per day, but I don’t know any of them to behave badly like the homeless person drinking vodka in the road.

      @@Max-dg5gj You don't have to be an alcoholic to drink and have a car accident or other of the myriad accidents or violent episodes associated with drinking. Moderate drinking increases your chance of contracting a number of diseases other than alcoholism .

      More of a freedom-of-choice person myself. However, if one chooses to imbibe, they should be held fully responsible, even to an extreme when driving. Prohibition took the choice away, people rebeled against that limiting decision made by someone else. Organized crime vs disorganized politics resulted in a complete mess.

      @@honthirty_ I didn't call for prohibition, I said it didn't work. I do call for people to have full information about the consequences of whatever they put in their mouths and take into their bodies, drinking, eating, smoking, snuffing or snorting. It's as important as people having full information of what they inject into themselves or allow others to. One thing that is indisputable is that you don't have to be an alcoholic in order for alcohol consumption to kill or maim someone, either the drinker or those they make their victims.

    The phosphate drink reminds me of tonic and bitters. It was given to me by a friend from the Air Force who said it made you look like you were drinking while settling your stomach and pacing yourself. I drink it now when I want to be social with friends who are drinking and look like I have something a little 'fancy." Very tasty, especially if a person likes a less sweet drink.

    Try making a mocktail with kombucha! We're a kombucha brewery and we've made loads of mocktails at events and it really adds that bit of body and acetic kick that is missing from mocktails (probably because it's fermented and brewed). Disclaimer of course kombucha does have small amounts of alcohol in it, so be careful if you make your own - but if you pick up some commercially made stuff (like ours) it's less than 0.1% alcohol content. ❤

    When I am DD I drink lemon lime & bitters. In PNG the cost of soft drinks (Soda) was not cheap so we used to ask for lemon lime & bitter - Strong bitters and we were happy to get buzzed on on this soft drink.

    I'll have to do some exploration along these lines. As it is, I generally end up with a virgin mary or just a tonic with lime, though recently decided a virgin mojito is pretty good too. The problem is when you're in a bar (think singles bar, dance club) and they're slamming drinks out, no one has time to make anything, and your tonic with lime almost always comes in the water glass which is just too obvious. If you're seated at least you can usually get someone to give you a rocks glass. Minor struggles, and at 20 years sober I can't seriously complain.

    A modern horse’s neck has alcohol in it. It’s similar to a mule, made with brandy and bitters in addition to ginger beer/ale. I find it has a stronger alcohol flavor than a mule and less sweet. Just in case someone wanted to order one at a bar, they should know it will come with alcohol.

    This is the first of your cocktail videos that I've watched, because I loath alcohol. I do like the idea of a non-alcoholic bev which has more sense of occasion - of effort put into it. :) But I'm never in bars or at parties where I'd be "expected" to carry a drink around, and I'm not sure I want to put in the effort to make myself a fancified drink. I dunno. Maybe?

    That Horse's Neck sounds good.
    Think it's mentioned in some of the classic 1930's movies.
    You could use sugar free ginger ale in it.
    Wonder if the peel adds much lemon flavor or if a good bit of actual lemon juice in it would be good.....
    Btw, anyone know a good nonalcoholic replacement for gin?
    So many cocktails use it as the only alcoholic component so that it's replacement would automatically make a mocktail I think.

      Yes! In Top Hat they order a horses neck! I love that movie and was inspired to order one in the past.
      It may have been alcoholic in the movie, the modern version is an alcoholic drink with ginger beer/ale, brandy, and bitters

    I can see an increase in the popularity of temperance drinks. There are just too many variables "out there" that limit a "good time." We have a store here in Winnipeg that just opened last month that specializes in non alcoholic beverages. It will be a long, tough road for them but I wish them well.

    Glenn, Would it be possible to re create jarrito's pineapple soda pop? I havent found a recipe that quite does it justice. It would make a good video and you could use it in future cocktails after dark. Just an idea I thought youd enjoy.

    Lemon balm simple syrup + tonic water (Fever Tree: Premium Indian) makes for a good mocktail, I think. Syrup amount to taste. Something about the flavor combination somehow strikes me as boozy.

    If I were to go into a modern bar, what are the chances that the bartender would have acid phosphate on hand? And if those chances are low, is there a reasonable substitute that would give a similar flavor?

      Chances are probably pretty low, unless it's the bar that bartenders go to after work or on their night off. Good / great bartenders know what it is, but many bar owners won't stock it because the punters don't order it.

    I remember a cocktail party I went to with my then husband. The hosts spent a fortune on very expensive champagne, and after one glass, I switched to Perrier with a little bit of lemon juice.
    The other women there asked me how I could be drinking so much booze without getting drunk and wasn't I worried about the calories. I told them what I was doing, so all of us women, except our hostess, were remaining sober, while our husbands were getting drunker and drunker.
    A few marriages nearly ended that night. 🌙

    Are "seltzer" and club soda the same thing? For the second drink that Glen made, he was actually using Club Soda. I realize that in the end they're both a form of carbonated water, but I thought there was some difference.

      - Seltzer is only water and CO2 - no other additives. The CO2 / water will combine to create H2CO3 and give it an acidic bite.
      - Club Soda is water and CO2 - but can contain other additives such as various salts. The CO2 / water will still combine to create H2CO3.
      But it's never that straight forward in the marketplace; with many Seltzer brands adding salts / minerals, and many Club Soda brands adding nothing. The brand I used adds Sodium Citrate.
      Julie and I belong to a club here in Toronto that does many blind tastings with ingredients / wine / liquor - a few years back in one of the cocktail tastings one of the more vocal members made a big deal about club soda Vs seltzer. So we masked him and made him taste blind; he couldn't tell them apart.

    Also, is says "imported" ginger ale so "Canada Dry" wouldn't be, right? 😂 Maybe Seagrams

      Well - this cocktail book was from Chicago USA, and Canada Dry was from Toronto Canada. So it qualifies as imported for the bartenders using it in the time period.
