Excellent video! And the meat looked like it came out super tasty! It's a lot of work and focus but the last time I ate beef Wellington (never cooked it myself) it was amazing. One of the best meals I've ever had in my life. Looking forward to making one hopefully soon.

It’s not blood, it’s myoglobin. I’d invite you to do some research on it. Overcooked a cut like this so there’s no pink would be a sin in my opinion. BUT cook your food how you like it brother 🔥

It was so good! I'm more of a fried walleye kind of guy, just can't bring myself to smoke one!
