@@millenialbroadcast that’s interesting I’ve never wrapped chicken or Turkey and gotten skin that wasn’t chewy. Normally if I do that I pull the skin off and smoke them that way.

Why wrap them would think that would make the skin chewy.
Wrapping with foil tenderizes the meat and makes it less chewy. I found this out through trial and error but will use this method from now on.
