Japanese Strawberry Shortcake

My niece gave me the inspiration to make this cake. She said that this is her favorite cake whenever she goes to Japan. I hope with this recipe I was able to recreate her favorite cake. This is a very simple and light cake which is typical of Japanese cakes. The slightly sweet whipped cream is a wonderful complement to the sweet-tart strawberries. Can I say - almost guilt-free? :). Enjoy!
