Viscosity of Alginate Solutions at various concentrations

  • This video shows the viscosity and flow characteristics of correctly hydrated Alginate Solutions at a range of concentrations up to 4%.
    All samples were dispersed and hydrated using a Silverson High Shear Laboratory mixer. A food grade Sodium Alginate was used but it should be noted that results can vary widely according to the type and grade of gum used.
    Higher concentration Alginate solutions can be achieved depending on the ingredient type.

    Im probably too late and won't get a answer but I wish u guys would have put more details about the alginate solution and how it was activated 😅 I'm confused on how it was made because I tried this experiment and failed horribly. What is the type and grade.
