    With all due respect for this Butcher, but there is no marbling at all in the bone-in rib eye steaks! So those steaks must've been very, very tasteless if just grilled. Maybe if they are grilled with a thick layer of sauce they could taste okay.

      Actually heavy marbling is associated with grain fed animals which you mostly find in the US but less in Europe. That being said grain fed animals are unhealthy and that why they have more intramusculaire fat. And the animo acid profile will also be less nutritional for humans. But yes it will give more juicy meat , but I wouldn't say more flavorful

      but but but you can taste the terroir of the countryside in the beef. You must be mad :) Jokes aside very true. More down to the Limousin breed which have lower levels of intra-muscular fat (marbling) and subcutaneous fat driven more by history and the lies that saturated fat is the cause of heart disease. Yes I am a "carnivore". Not a fan of of this breed at all. There are many other breeds that marble well regeneratively on grass only.
