Can :) but fatty beef will get more fat scum when you're making the soup, so you want to skim more often. Same with chicken, don't use too much cus we want more prawn taste than meat! if you try let me know how it went!!!
hi mary, you can easily buy ready-made dried chilli paste in singapore/malaysia, but i always prefer to make my own because it's extremely easy and keeps long. can, just swap the prawn stock with chicken or beef stock. It will not taste like the original hokkien mee, but if you don't like prawns I don't imagine you like the regular taste of hokkien mee anyway :P
Some MAJOR improvements could be made since this is Pork free.. the sweetness from pork is replaced by dried anchovies- Great. For the sambal, the soaked prawns should be fried and drained before blending...

Can i use prawn instead of prawn skins for the soup?
not recommended. You will need to cook the prawns for a long while to get the full essence - which will only overcook your prawns!
