I shall never know why, but Japan and her people always make an art form out of food. Everything, even just the peaches look really pretty.
Made this three times already. Really delicious cheesecake. If you're using regular peaches out of season, I would say boiling them for longer than 5 minutes is a necessity - I boiled mine for like 30 minutes until they were soft enough lol. Also, make sure your cream cheese isn't cold when you're mixing the gelatine in or else it'll set weird.

Peach Compote
2 peaches
2 cups water
1/2 cup white wine (the recipe doesn’t specify but cooking white wine is what I used, for those that asked, try white grape juice as a substitute.)
1/2 cup sugar
Lemon (Lime? Whatever floats your boat)
Raspberry Jelly
1/2 cup raspberry
1 1/2 tablespoon sugar
2 tablespoon water
1/2 teaspoon gelatin
Rare Cheesecake
7oz Cream cheese (can be rounded to 1 cup)
2 1/2 tablespoon sugar
1/3 cup plain yogurt
2 tablespoon peach syrup
1/2 teaspoon gelatin
7oz heavy whipping cream (recipe actually uses a little under 7oz but probably can be rounded to 1 cup)
1 1/2 tablespoon sugar
Peach Jelly
1/2 cup peach syrup
1/2 tablespoon (a little over) gelatin
7 oz peach syrup (can be rounded to 1 cup)
Peach compote
A couple of things I learned my first try at making this:
1. Most importantly they’re using white peaches in this recipe. I used yellow peaches not knowing the difference and ended up with a weird color deviation. The change in fruit you use will also yield a different flavor.
2. I used frozen raspberries thinking the sugar granules were ice granules, kind of looked a mess when i finished, use fresh raspberries.
3. This last pickle you may not find yourself in like i did, because i couldn’t find a store bought sponge cake sheet, and i suck at baking, i decided to use several miniature sponge cakes, finely mix them, and form them into a crust. It seemed like a great improvisation, but despite my efforts it ended up making for a lumpy foundation and caused the rest of the cake to be lumpy as well.
If you don’t care about how it looks though it taste GREAT

I made this as a dessert for a small dinner party. It took a lot of time and it was daunting, but I got it done. It wasn't as perfect as the one in the video, but I was very proud with the results and it got rave reviews and I would make it again. It was show stopper.
