You may be thinking of Eleonora Vaiana also known as Steva Deathless of the band Deathless Legacy. Nightland sing mostly in English and it's common to have some Latin in Italian metal. English is one of the most spoken languages in the World, which is why many Italian bands sing some English. Some Italian bands sing mostly in Italian. There's at least one Italian band sings in Occitan.
