I’m a vegetarian who just found your channel today. I find your content (and your sandwiches) compelling and creative even when the food doesn’t match my dietary choices. Keep up the good work!
I never stopped to think about the relation between bread type (softer or harder) and the consistency of the ingredients, this is a good thing to keep in mind. Thank you!
ive had your channel pop up a few times and watched a few videos. this one here, shows serious food insight. i eat more beans than most people and this is right up my alley. when you mentioned damatos i thought, well probably a damatos in every city. turns out no, you actually are from chicago. my local grocery store used to have the damatos mini foccasias (3 or 4 came in a bag) and everytime i go i still look, even though they havent carried them in a couple years. i need to go to the bakery sometime. but i digress. your food IQ is high. this sandwich sounds excellent and this is a great video. good work my friend.

Thank you! and yeah, Damato's bread is the good stuff
Now THAT is a recipe that's bringing sexy beans (to lift a quote from a series by Adam Ragusea).

That is one big baguette!
seeing that single perfect gigantic flake of salt get crushed was almost overwhelming
