    I made this last night (the day you posted-lol). In my years of being vegan I have made probably 20 mac and cheese recipes. This one is the best. Nisha, you've cracked it. Last night my husband said, through mouthfuls of this pasta - "IDK what you're having for lunch tomorrow, but dibbs." Thank you for being a trustworthy recipe writer. It is so valuable knowing I can follow what you say and know it will be good. (e.g. using coconut milk for this recipe. I would not have done that, but I trusted you that it wouldn't be coconuty and it wasn't!)

    I know my comment will get lost in the void but here it goes :)
    I became vegan in January after being vegetarian for a few months. As a picky eater / someone not a big fan of veggies I just figured I have to eat salads or tomato pasta, and thats my life. I tried recipes from other bloggers / youtube people and was always disappointed. The food was "alright...for being vegan." I have made four of your recipes in a row and all of them have been stunning. Ive eaten all of it! (not disappointingly giving it to my boyfriend while I ordered something to eat)
    Its unheard of for me to cook something vegan and love it. But you did it :) I bought your cookbook and everything. Thank you for making vegan food so delicious.

      @@jahlyssablackwin8827 Yes! The amount used in the recipe is pretty small. Miso is quite salty so you’ll probably have to increase the amount of salt you add.

    If you don’t like coconut milk, you can just use another neutral plant milk (like soy or oat) and then add 2 tablespoons of extra virgin olive oil. It makes it so much richer and smoother and also has a bitter flavour that really resembles cheese

    I made this last night. Substitutions I did were cornstarch for tapioca, chipotle seasoning for smoked paprika, and I used frozen butternut squash that I steamed (I just wanted to use as much of what I already had as possible). It came out to be fantastic! I will be making it again.I might try with sweet potatoes since I already have those.

      See why can't I have that recipe? 🤷‍♀️ I don't want to spend 2 hours cooking. I'd be vegan if I didn't have to spend all day prepping and cooking and finding crazy hard to find ingredients.

      ​@@MisstressMourtisha way late but please don't be scared to use frozen produce and some shortcut stuff!! I'm not vegan but I DO have trouble wanting to dedicate 2 hours to a single recipe. Shortcuts are fucken life savers. And, making it vegetarian and not quite vegan is still better than nothing :)

    I made this recipe on Thanksgiving, and it is A+! I've been a vegan 6 months and used to make a classic M&C with tons of diary cheese. This recipe without any vegan cheese is just amazing and delicious. Find the best pasta you can to bring out this dish. Cheeers!

    I've been a meat eater for 23 years and this recipe is BOMB AF. Doesn't taste like real mac and cheese but just as a pasta it's absolutely delicious!! I've sent this to 5 friends already to get them to try it.

    This is by far the best vegan cheese thing I have had. I don't crave almost anything from the old days aside from mac and cheese and ice cream. This is really tasty, super filling, and I was amazed at how well it did to replicate the complex notes in traditional cheeses. Well done, and thank you for sharing this recipe.

    Nisha, your recipes have consistenly provided sophisticated depth of flavors that we thought only possible in fine restaurants combined with the comfort food that I thought only my mother could achieve! I have made this recipe three times and your butternut squash based cheese is the best (and healthiest) cheese sauce ever. The crispy topping was perfect and we use chick pea pasta, always wonderful. My parents are dairy obsessed and they loved it, thanks again!

    Last time I tried to make a vegan mac&cheese the recipe was similar to this one but called for onions instead of squash, and I didn’t care for the end result at all. This sounds more promising, I will try it the next time I have butternut squash on hand.

    I made this recipe yesterday for my Friendsgiving and it was so good! I didn’t have time to make and add the crispy topping & I didn’t have onion powder but it was still amazing and All of my non vegan friends liked it a lot too! Definitely gonna be making this one again before the holiday seasons over.

    My wife and I enjoyed this night! She is not Vegan and I am Vegan and Gluten free. We both loved it! I added to the recipe 1 cup diced onions, 3 Beyond Burgers (broken up) and 1 cup mushrooms all sautéed separately until nicely browned. Also added 1/2 teaspoon Rosemary and Thyme. I needed more protein and so I was going for a take on Romanoff. For the pasta I used Banza (chickpea) rotini. Just be careful to not overcook the rotini, maybe 7-9 minutes in boiling water or until tender. I used 3/4 cup of nutritional yeast and 1 can of regular coconut milk. Made my own gluten free bread crumbs by adding several slices of gluten free bread with the squash cooking and pulled out when golden brown and then put in food processor. So rich and hearty! We both said this a keeper! Thank you! P.S. I am going restuff 1/2 of the cooked butternut squash shell for Thanksgiving with it for my main dish!

    I just made this dish and it tastes absolutely delightful! I love coming home from a long week at work to a box of mac n cheese. It’s one of the few holdouts that keep me from being completely vegan. I absolutely adore this recipe! It tastes so cheesy and it’s so satisfying! I love the subtle flavors in it as I’m enjoying it! I didn’t buy any more sad boxed Mac n cheese on my grocery trip this week ;) Your recipe is way more guilt free. Thank you so much! I have been making one to two recipes from your TH-cam channel per week and my family is loving them. This one was especially easy and so good.

    Mac n cheese is the best with broccoli , I usually throw it in with the noodles since they both cook in same time and I believe it adds more nutrients, and also this may sound weird but add hot sauce as you eat it- to taste- it is really nice.

    So I made this recipe twice and the other cheese sauce recipe on this channel once. I have to say that this is the superior one, except in texture. I could just be that my blender isn't quite as strong, but Cashews never get perfectly creamy for me, and cashew based sauces tend to end up a tad grainy. More importantly, after a day in the fridge, the cheese sauce in this recipe kind of solidifies and breaks. I've found that, for an all purpose cheese sauce, the best combo for me has been using this recipe but with steamed cauliflower instead of cashews. The miso is honestly such a game changer in getting this to taste like I want a cheese sauce to taste, but using Cauliflower yields a much smoother texture. It is a little more watery, but it remains in a very acceptable cheese sauce viscosity range. I used the version with cauliflower in mac and cheese (as is intended here) as well as in nachos and a crunch wrap, and I am sincerely of the opinion that this stuff is functionally indistinguishable from a regular mild cheese sauce with other flavors and textures in the mix (it's much more obvious as vegan cheese in Mac and cheese than it is in a taco). What I appreciate most about this channel is that, not only does it give us great recipes, but it also gives cooking techniques that can be extrapolated and expanded on, all while showing tasty ways to enjoy food while also feeling healthy. This recipe is a winner for sure, and I'm so glad I found this channel!

    I made the sauce the day before Thanksgiving and while it had a good taste, I didn't think it would fool anyone that it was cheese. I told my diners to expect pasta with a good sauce but not mac and cheese as they know it. OMG! It tasted just like a delicious traditional baked mac and cheese. Vegans and non-vegans alike were impressed. I used frozen butternut squash, Ripple Half & Half for my plant-based milk, and chickpea pasta. Next time I'll make it exactly per the recipe. My pasta came in an 8oz box, so I had a bit of sauce left over. Added jalapeno and had with tortilla chips. Again, absolutely delicious. Thank you so much for this brilliant recipe!

    In one of your videos you had your non-vegan boyfriend do a taste test and comment on his thoughts about the replicated dish. If you did that in more of these 'replacement' style dishes it'd be super cool. I'd love to know how someone who eats cheese feels about this alternative cause it looks EXACTLY like cheese.

      @@whitneysanders6996 one thing you should know on this channel is you should put your trust in her recipes. if you’re looking for a cheese satisfaction i can vouch for her mexican cheese sauce recipe on her buffalo chickpea quesadillas. it taste just like nacho cheese, even better than most brand, it goes with pasta, burritos, nachos, dip, etc

    Having checked a few "vegan" channels, I really only come back to two of them, one of them is yours. I love that the ingredients are actually healthy, natural food, vs "buy a block of vegan cheese and melt it" which is completely pointless in my opinion, one might as well just eat regular mac and cheese. Even with healthy ingredients this is a fairly decadent dish - but having butternut squash, cashews, etc. in the sauce instead of processed "vegan" junk good makes a world of difference imo. It's summer here now so idk where to get the squash but I'm definitely bookmarking this for autumn :)

    I’ve made this twice now. I followed your recipe exactly the second time with the tapioca flour and it does add something. Even my not vegan daughter wanted 3 bowls. I use shells pasta instead of the macaroni shape. I will continue making this.

    Made this yesterday, it was SO delicious. I had missed mac n cheese so much after going vegan, and it came out so well! I also added fried/marinated tempeh bits to imitate pancetta, and it worked!

    I'm not vegan but am exploring vegan dishes, and I was absolutely blown away by this. I did not expect to like it so much, and I do, it's creamy and savory and I was worried about the coconut milk but you dont taste any of that. Amazing recipe.

    OMG! I just put in my imperfect foods order for next week and got a butternut squash. No specific plans for it other than to maybe just roast it. But THIS...this is what I'm doing!     Literally eating this right now. I didn’t have nutritional yeast, white miso, or tapioca flour. I made no substitutions and it still came out amazing!! I can’t wait to try this next time with all of the ingredients 🤣🤣 thank you!

    I made this for Thanksgiving tonight and it was a HIT! Love it. Thank you for an easy-to-follow and actually easy recipe that tasted so bomb! (btw, I got extra lazy and used canned pumpkin puree instead of roasting butternut squash, and it turned out fine!!!)

      Her recipe in her cookbook calls for 2 medium Yukon gold potatoes? It was not included in this video. Did you use the potatoes?

      @@rhondamoore4466 yes, I used one large Yukon gold, and it adds great body to the sauce, highly recommended. I didn't use the fake butter and it still turned out delicious 😋

    Fun fact: what you call "raw cashews" that you can buy at the store are not actually raw, they're steamed or roasted at a high temperature before they're sold because they contain the same toxic substance found in poison ivy!

    I think that if you don't have access to coconut milk😔, you can blend an avocado with a tiny amount of oat milk, that will make it even creamier. The cheapest and more commonly available ingredient to add is wheat flour. Yes, you heard me right: wheat flour. In Italy we use it to make "besciamella" sauce for lasagne. Just add a little bit to the blended cream and blend again until smooth. 🤗😁😘

    I made this tonight, and was convinced there was noway it would look as good as your one and absolutely no way it would taste cheesy…oh my god! It is so creamy and cheesy! I’m not vegan, but slowly trying to cut down on dairy/meat as I have psoriasis and there is a link. This was amazing and I can’t wait to try more of your recipes.

    This will be our new go-to recipe for mac & cheese. It was a hit Christmas Day (along with your Vegan Wellington with Mushroom Gravy). I made the cheese sauce a couple days in advance; made the elbow macaroni the day before. Then, Christmas Day, combined it, added the panko topping and . . .yum!!! So easy and delicious. I was surprised that we enjoyed it more the following day and even more so the day after that. It just firmed up, without the pasta getting mushy.

    Well! Made this recipe this past week and I thought next time I would have to cut the recipe in half,... but now I am not so sure I will, since between my husband and I ate the all thing in two days, I used the leftover for two of my lunches at work....So good! Also since I have pre-diabetic symptoms I used red lentils pasta. Your recipes never fail me, thank you so much!

    Definitely the best M&C I have made. Used pumpkin puree instead of roasted squash, but still so, so good! Pumpkin-stuffed shells will be the next dinner. :)

    I just made this, and accidently ended up eating half the bowl haha, but in my defense it was just that good! I did sub out the cashews for an equal amount of silken tofu(because cashews are very expensive where I live), but it tasted so delicious that I don't think it mattered. Thank you for sharing!

    Didn't grew up eating mac'n cheese so I have absolutely no experience with it but this recipe seems super delicious ;D I love any pumpkin/squash based sauces and I am sure this one was super delicious as well! Plus, what a velvety texture! I am sure any non-vegans would enjoy it too!

    this is definitely one of the best mac and cheese I have ever eaten! and bonus points for butternut squash for nutrition value. I didn’t add the bread topping- I also had some and just made it as stovetop mac and cheese which was so delicious as well! I used shell pasta. I almost didn’t want to buy miso paste, bu I’m glad I did- it is apparent in the flavor. Thank you! definitely a new favorite. 😌

    I hate cheese. So I made your recipe and it tasted so much like cheese that I ended up not loving the end result haha, which is probably a good sign in this case. However, the recipe is really good. I loved how creamy the sauce became. My blender isn't strong enough to blend the cashews together with the other ingredients so I first blended the cashews (with a little bit of the water they soaked in) to a nice cream and then added it to the other ingredients. That worked really well.

After initially stating that looks “too healthy” because of the roasted butternut squash, my non-vegan spouse said, “it really has a good flavor”. 🎯🥳 It will be difficult to leave any left overs. 😉 I am reading your instant pot cook book now.     I just made the mac and cheese from your cookbook for dinner tonight and it was amazing! The cheese sauce was delicious and I’m planning to make the queso version tomorrow. This one seems pretty similar as far as ingredients go, but I’m definitely going to try it when I want a different prep method.
