Grilling a Perfect Flat Iron Steak | Step by Step Instructions

  • Have you wondered what is or how to cook a Flat Iron Steak? This is one of the less talked about, but very tasty, cuts of beef. Flat Iron steak is usually a pretty large piece that is several inches thick (mine was 2 inches). It is from the chuck part of a cow so a little tougher in texter than a Ribeye or NY Strip. I pat dry, season with tenderizer and fresh cracked pepper, then roast on the grill for an excellent medium rare. Cut across the grain for a more tender bite.     This cut is my wife and my favorite steak to cook. When my daughter was a younger the only thing we could get her to eat consistently was steak… so we ate a ton of this cut. Haha It was enough for us all to eat and have some leftover for lunch the next day. :)

      That's a nice story to share, and your daughter sounds great! My little boy doesn't like steak yet but hopefully he does when he's ready to try it. I like the flat iron because the texture is nice and it's quite a bit of beef.

    Save yourself some time & ingredients, as the Flat Iron Steak does not require any meat tenderizer.
    Salt, pepper, a good grill or even better, a cast iron pan, at medium heat+.
    Another tip, is to heat your plate, instead of tenting it under foil, as that steams a steak that you have taken great care to make crispy on the outside.
    I didn't make this note to embarrass you, but we have been cooking these little beauties, for years & these were our findings.

    When my children returned from school they told me, daddy smells like a shoulder. And yes, the taste and smell of this cut of meat is different from the rest. In addition, the tenderness is impressive. It is my favourite. The best and its price is not expensive.

    I'm sure this steak was delicious, and I'm adding this comment for viewers who may be less experienced in cooking this cut.
    The tenderizer you added is MSG -- totally unneeded for a well-marbled flat iron like this. Just add salt and pepper. One thing you didn't mention is to set the meat on a countertop long enough to come to room temperature before it hits the heat. You'll get a much nicer crust and more even cook.
    I have much more predictable results using a very hot cast-iron skillet instead of a grill (though I have to manage my smoke alarms). While the rosemary-garlic butter is probably delicious, an even easier approach is to drop about 2 tablespoons into the hot skillet near the end of the cook. Baste the steak with the butter as it melts. The butter will brown a bit and deglaze the skillet. Add the pan juices to the juice that runs off during resting and you have a rich and delicious sauce to drizzle over the meat after you've cut it.
    I don't mean to sound critical -- it's just that a flat-iron steak is an affordable, easy and delicious meal when you have limited time and money.

      In our area, in Canada, I can find 4-8 of them a week, at our local IGA & at 2 of our meat shops.
      The price is comparable to Pork Tenderloin, which is quite low.

    First off you don’t need to tenderize it. It is already a very tender cut so you need to do some more research on it first.
