  • The Pad Thai is probably the most common Thai dish outside of Thailand, and for good reason. It's delicious!

    Chicken Pad Thai
    The below is for one (adult size) portion:
    60g Pad Thai dried rice sticks
    0.75 tbsp tamarind puree
    1.5 tbsp brown sugar
    1 tbsp fish sauce
    1 tbsp oyster sauce
    Juice of 1/2 lime plus ¼ for serving
    2 tbsp peanut oil
    ¼ brown onion
    ½ red chili (keep some for garnish)
    2 cloves garlic
    2 spring onion greens
    80g chicken thigh
    1 egg
    3/4 cup beansprout (keep some for garnish)
    Small handful finely chopped peanuts
    Small bunch coriander

    Oh man, Pad Thai used to be my absolute favourite dish while being in Thailand and the inskip point near rainbow beach used to be my absolute favourite beach while travelling Australia. This video just brought so many memories!

    Looks good except for the egg part, I think they are not supposed to be overcooked and dry. If you would add in your eggs after the noodles (put to one half of the pan, eggs other half), cook them like scrambled egg (still a bit runny) and mix in with the rest your noodles will be way juicier.

    Made this last night, was delish but I’m interested in what noodles you used, the texture on mine weren’t great and they broke up, so think I would soak them for a shorter time knowing they will cook more in the wok. I also used 10-15% less brown sugar and my wife thought it was more citrusy than what she is used to, I loved the citrus/tamarind twang. Overall though, super tasty!

    Its so funny. I work at a restaurant and have been for the past few months. Its like my first job so I don’t know much but we have the sam en knife you have there and we use the same massive green plastic cutting boards ive seen you use. Where do they come from and is it more than just a massive councidence? Thanks, really enjoy your content and vibe. (And the knife in question: japanese style hollow ground wooden handle with the engraved writing in the side)

      super authentic pad thai is more complicated than this and takes much longer. But this is a very good "easy" version that will taste great. Authentic recipes will call for things like daikon, dried shrimp and freshly shaved palm sugar. My thai friends laugh because it's not very common to make pad thai at home in Thailand because of all the ingredients you have to prep.

    You don’t need to soak the noodles overnight. Just an hour in warm water. Def needs palm sugar and not brown sugar, the molasses in brown sugar has a different flavor. Never seen oyster sauce in pad thai sauce before. Usually pad thai uses dried chilis, served on the side as a garnish so you can make it however spicy you want it.

    That looks awesome. That looked like a regular frying pan that you used which I know that you said that you forgot to bring your wok with you. There is a little Thai restaurant near where I live, central Vermont USA, and the woman who does all of the cooking makes all of the sauces that she uses from scratch, minus soy sauce and fish sauce, and she also makes the different noodles that she uses in her dishes. Love Thai food.

    I would make criss cross cuts into the chicken to ensure heat distribution equally instead of just browning the outside.

    Great job! Loved your shorts on TH-cam and subscribed. I love to cook. Especially Pad Thai. This Looks similar to my version of Pad Thai . I noticed you referred to the chicken as “ adding protein.” After you already added eggs ( which is protein and so is the noodles and veggies) I cook carnivore , vegan, vegetarian and gluten free for crowds of 50 at a time. I hear restaurants always saying when you order a rich in ingredients salad “ Do want protein on that?” I feel Condescending when I have to reply” There is already protein in it.” Plant protein as much as the “Meat” you’ll be adding. It’s all protein.” Do you know why we can’t just say “ want to add meat?’ Lol

    Spot on with the exception of the brown sugar. Whilst yes it can be used as a substitute, yet authentic would be palm sugar. Nice job m8
