Ace combat is more of a arcade styled game whereas war thunder's more realistic. Both are great in their respective ways, it just comes down to which do you prefer.

For an Ace Combat veteran since PS1 days, this comparison looks dumb to me.
But when I think about those who never heard of Ace Combat or haven’t tried it yet (15 years old and younger), I think this comparison might be helpful them.

It's crucial for people who are just now feeling interested in dogfighting/aerial war video games but don't know which ones to choose or if they're in it for fun or realism. Show Ace Combat to someone who knows little about jets and they might think of it as a realistic jet sim with a forgiving missile count. War Thunder, on the other hand, focuses on realism with some arcadey elements and may come off as too much of an investment (money + time) for someone who wants a flexible flight fighter sim but doesn't want to spend over $60 on their fave planes while dealing with the grind meta.

The controls are pretty much the same, since you can rebind most of them, but the freelook in ace combat is not as easy to use as in war thunder.

(Ace) unrealistic mechanics made the game more fun and forgiving for mistakes
(Warthunder) realistic to the point of just kinda feeling boring, also feels less impactful as a result
