You are one of my favorite people in the world Pasquale! I'm the first generation born in this country, my family is from Italy, so I spent my childhood in the kitchen with my Nonna. It's been about 20 years since they've passed and I haven't been the same since. I even took culinary school because of my Nonna! Your videos, your voice and your love for food brings me right back into that kitchen making shmelts for Christmas dinner! These videos might not be much to you or anyone else, but sometimes I tear up watching them cause of the memories that come with this experience. @AdamOS Retro Same here, but second generation. I've had similar circumstances/experiences with one exception, I never went to culinary school. I thought about doing it, but never did. Food is a passion, a binder with family and friends, and it's a language that speaks to me. I miss the older generation. They made food for the family with love. For them it wasn't work, it was done with love. I miss that so much. Pasquale brings some of that back. Thank you, Pasquale. Salute and Cin Cin.
@@milehighed52801 All my friends think i'm crazy for cooking for myself all the time but other than it's obvious health benefits, it's just fun and intriguing to do! And you're right, done with love for sure! I just made a low sodium calzone, took me about an hour to make. Had a friend come over and ask why I didn't just buy one from the pizza shop down the road. These new generations just don't know haha
@AdamOS Retro Very cool! I haven't made either a calzone or a pizza from scratch yet. I bought a Weber Kettle to do a pizza in a pizza stone over wood, but I haven't got around to it yet.
He really is amazing. After my grandma passed I never thought I would find a cook so passionate and familiar. It is like being wrapped in a warm blanket with a favorite dish by the fireside. @John Brase His son Jeremy does an excellent job. I hope he's learning his father's trade as he goes, to carry on the traditions. That doesn't seem to matter as much these days.
Made it tonite, even the picky eater liked it; spouse loved that it had olive oil and not butter, and I was grateful for a new and different pasta dish that I had ingredients for already in the house! Thanks for the awesome recipe!!
One of my favorite people on TH-cam. I would par cook the pasta in some stock and finish it in the pan so the breast stays very moist. I get a ton of ideas on this channel.
I made this last night it was so easy and absolutely one of the best pasta dishes I have ever tasted. I have also made the Sausage and Peppers that was over the top the best sausage and peppers I have ever had. His recipes are easy to follow and the videos what can I say....THE BEST

I'm from Bensonhurst Brooklyn, the most Italian place ever. This recipe is GENIUS. one I never heard of before. I thought I knew it all, but wow! That's amazing. I'll make it this weekend for the family. They'll worship me as a goddess lol. (I'm tempted to make it with fresh Pastosa pasta though. 😁)
Chef hold your hand over a bunch of tomatoes and slice them in the middle like one does when butterflying meat. If you don’t want to use your palm use a plastic lid to hold down the tomatoes. Works like a charm and done in a flash either way.

Did it tonight for the 2 time. It’s excellent. In the Christmas holiday, my family cook spaghettini in chicken broth. It’s confort food at it’s best.
