Going under the stitches and through some felt fibers is enough to hold . Especially on a face. I knot when I know it needs to be secured. Sometimes, I knot 2 or 3 times. Just depends in what parts I’m working on.
When you read the instructions, they say to appliqué the pieces to the top and not go all the way through to the back . That is the same with the embroidery stitched. You just grab the top layer of the felt.
For appliqué.. you’ll use 1 strand. For embroidery stitches you’ll use 2 mostly. Sometimes or 3 . I separate the floss from the 36” of 6 strands as I need it. I usually stitch with pieces no longer than 18”. Less knotting and tangles this way. 🙂 Hope this helps.
😁 the non cheating way is to outline stitch without going all the way through the felt. It’s how the instructions say to do the embroidery stitching. On faces , I find it’s much easier to use the “ stab method. I’ll do the outline stitch as instructed on all other parts of the stocking though 👍🏻

Why do you not note the back when finishing. I feel knotting it makes it more secure.
