I would love to see a bunch more pasta recipes, with different veggies. Pasta is very versatile and can be elegant, and I want to add more recipes to my list. Also, I thoroughly enjoy the pasta making process as well. I feel very "in tune with culture" I guess you could say. :)

Agreed! Gas stoves are far superior than any other. Just making alfredo sauce alone is SOO much easier! Being able to control the heat much quicker is such a bonus.

I used duram 00 grade flour (for the first time), I rested the dough for 30 minutes, but the oil separated from the flour and was a disastrous mess going through the pasta roller. I had to drop back and punt with some boxed lasagne strips instead. I have made homemade pasta before but used all purpose flour with much more success. Where'd I go wrong Byron?

Artichokes aren't really available in my country... I'm wondering about what the taste is like and if I can substitute it with another kind of vegetable which has the closest taste, aroma and texture as an artichoke
Hey Byron, you make so many yummy things and I really want to try making them but I don't have an oven...(I know, crazy right). I live in Japan and they don't have ovens. Anyway, do you have any other ideas of what I could do instead? I have a microwave, a fish grill, stove and a weird toaster that's kind of like a kids mini oven so not much fits in there and it only has one heat setting.
This is one of those niche channels, the videos are good to watch to learn techniques and whatnot but most of the recipes are fairly complex and he makes a point of doing just about everything from scratch. There are other channels for everyday cooking ideas.
I guess, I love his ideas though, but yea I definitely wouldn't be making pasta from scratch! Aint nobody got time for that unless you do it for a living!

rollatini is not an italian word (it comes from the english roll), cannelloni is the italian word for them (but you can call them rotolini too) PS cannelloni is plural, one is a cannellone :)
