I am a lab tech now and I was previously a veterinary technician. But many lab assistant jobs allow entry level employees, especially if you have an associate of applied sciences degree or bachelors in biology/chemistry.
Biology, biochemistry, or chemistry work (: for a lab assistant you may not need a bachelors degree, some states accept an associate of applied science and many take on students before graduation.
