    My advise for any kind of meat is to let it drain in a colander for a couple of days. Then add just enough oil for the meat to become sticky and salt as if you were salting a ready cooked meal. Mix and seal in a bag until grilling.
    Η δικη μου συμβουλη για ολα τα κρεατα ειναι να τα αφηνετε σε σουρωτήρι στο ψυγειο για 2 η 3 μερες. Μετα να βαζετε λιγο ελαιολαδο οσο οσο να το "πιασει", αλατι οπως θα βαζατε σε ψημενο φαγητο και μετα σε σακκουλι τροφιμων μεχρι να το ψησετε.

    Which is the best part of the lamb to use if your doing lamb souvla with no bones

      Hi Steve. Well, in general we use all parts of lamb but bone-in. In contrary with pork all parts of lamb are juice and suitable for souvla. Without bones i would go for shoulder

    How high should we have lamb souvla should we have it on the maximum hight away from the coals ?

      Hi Steven and thanks for stopping by! Well souvla should always be at its highest point and at a speed that allows self basting of the meat without excessive fat droppings. In situations that charcoal is weak or towards the end (2hrs +-) you can lower it in order to have the same amount of heat as before.

    Hi champion Which motor are u using the motor I have is variable speeds that plugs in to the power point but even on the fastest speed it does not turn the meet super fast like your one does what kind of motor do u you ?

      Hi Steven how are you? Yes the cheap chinese motors in market are indeed slow. My motors are made in Cyprus by hand and as you can imagine house a more robust motor

    Why did you put the sheftales same time as the lamb and pork,1 and half hours for lamb,sheftales 30 mins

      Hi M and thanks for stopping by. Well skewered this way sheftalia needs a lot more close to an hour or even more if the charcoal concentration is not under that. But we do it like that simply because sheftalia is a kid's favorite. There always hungry before souvla is done so... but other than that yes, i could wait half an hour and then add the sheftalia.
